Café Linnea, Edmonton's first tipping-free coffee shop, had to discontinue the anti-trend measure and reintroduce tipping on August 22.

The cafe posted on Facebook that although it still supports the concept of paying employees higher hourly wages to maintain a living, it is difficult to realize this concept in the current market environment, so it has to return to the traditional wage and tip system and reduce the menu price; the tip paid by customers to the table staff will be divided equally between the service staff and the kitchen staff.

In July 2016, Café Linnea, a coffee shop at 10932 119th Street in Edmonton, uniquely began offering employees higher hourly wages, higher menu prices and no tipping.

Theo Fox, who worked at Café Linnea for a year, revealed that he was paid $20 an hour and liked the no-tip but higher-hourly system because his salary was stable and not affected by the size of his customers. Theo Fox said he worked in mid-to-high-end restaurants for seven years, when most of his income came from tips.

Kyle Murray, a professor at the University of Alberta Business School, believes that major changes such as eliminating tipping require coordinated action by the restaurant industry, and that one or two restaurants alone will not work; for example, if your restaurant does not accept tipping, but a plate of fried eggs costs $5 more than others, many customers may not come to your restaurant to eat, and as a result, your restaurant will not be able to survive.
