Carmen Estate is located in Baru volcano, next to Boquete, Boquidi. It is managed by the Aguilera family. Currently, the estate is owned by Carlos Carlos. The annual rainfall is about 3,200 mm, and the altitude is 1,800--1,850 meters. Fertile volcanic ash clay, sufficient sun during the day and wet and cold climate at night are very favorable for coffee trees to grow and coffee cherries to ripen! Cultivated varieties include Catuai, Catura, Typica Typica and Gesha;
Coffee is harvested from December to March of the next year. The manor regularly invites the local indigenous Nobes to help harvest. The harvested coffee berries are transported to the processing plant on the same day for post-processing. The residues of post-processing, such as peel and pectin, will be recycled into compost to nourish the coffee tree, avoiding pollution and effectively conserving water resources and the natural environment. After the shell bean Parchment is dried to a certain moisture content by the sun, it is finally dried by a dryer called Guardiola. Evenly dried shelled beans are packaged in units of 100 pounds, and batch information is recorded in detail. The raw beans are stored in the warehouse for at least 60 days to stabilize the quality of the raw beans before shipment according to customer demand. The raw beans are screened before shipment. The raw beans are packaged for export only if the size is above 17 mesh (7 mm wide) and the density is sufficient.
Carmen Manor has also won a brilliant record over the years. From the third place in the Best of Panama competition in 2003 to the second place in the Best Panama Wash Summer in 2017, it can be said that it has won awards almost every year. There is no doubt about the stability of coffee quality!
This batch of Carmen Manor coffee is a honey treatment batch, and the variety is Kadulla Caturra. The dry aroma of light roasting has nutty sweetness and a little vanilla plant, white wine fragrance, wet aroma gives off white grape, citrus and apple sour and sweet, sucrose and honey are also very full, and the taste is refreshing. The sweet peach, white grape and pear juice at medium and high temperature is comfortable to drink. After the temperature is lowered, it turns into apple, citrus sour and sweet, bringing white wine fragrance and hazelnut sweetness. The medium-deep roast is dry and rich, caramel, roasted almond and pine notes bring out a little dry sweetness of black dates, wet aromas of dark chocolate bitter sweet and caramel longan sweet are also very pleasant, the taste is thick and round, roasted nuts and caramel sweet lasting, some cocoa and raisin sweet aftertaste.
