A cup test shrouded in gunfire

In the summer of 2015, the dry season has arrived in the coffee and bean producing region of Rwanda, Africa. Gu Qinru and her team of international judges are stationed here, focusing on coffee cup testing.

Recently, there has always been a power outage from time to time, and the sound of the abrupt stop of the bean dryer sank with Gu Qinru's heart.

The power outage in the middle of baking beans means that all the coffee beans in this pot have to be reworked. As a result, the work efficiency of Gu Qinru and her colleagues was greatly reduced, and some people began to complain.

There was a sudden sound of gunfire outside the window, and the house quieted down instantly, and no one knew what had happened. The security guards motioned to everyone to stay calm, stay where they were, and then quickly assembled outside the house. Everyone looked at each other. After a while, they came back and said there was nothing wrong. After the cup test, they asked everyone to go back to the hotel to have a rest and not to walk around at will. The crowd muttered.

This is the second time that Gu Qinru participated in the COE (Cup of Excellence) Coffee Raw Bean Cup Test as an international judge, along with coffee experts from more than a dozen other countries and regions. In the past, in the turbulent raw bean producing areas, they had been protected by the police with guns, but they had never encountered any dangerous situation. This time she was completely restricted, and at first she thought it was a bit of an exaggeration, until the next day they heard that there was a shootout in the street the day before, and the president's brother was killed.

Gu Qinru suddenly realized that it was not just the journey and physical exertion that was annoying about looking for beans in the producing area.

Before making boutique coffee, Gu Qinru, an English major graduate, did simultaneous interpretation and bank Loan-admin successively. Simultaneous interpretation requires a high degree of concentration, rapid absorption, processing and transmission of information. Competition in the industry is fierce, Gu Qinru does not want to be compared, so he studies hard to improve his business ability. But she vaguely felt that she was missing something from the job of passively accepting translation.

In her early twenties, she could not see the future at a glance, and the intense work every day made her mentally stressed for a time. Many of the students around them went to work in the bank. They said that the atmosphere there was relaxed and the treatment was good. The family also talked painstakingly all day long: "it's good to have a stable job. Why do girls work so hard?"

Unable to overcome these voices, Gu Qinru entered the bank. The job of the bank is relatively much easier, just take over the customer manager's data every day, operate the internal system, review and file it.

In order to improve work efficiency, Gu Qinru wrote the codes of all the systems in the bank and how to operate the operating system into a manual. According to her, as long as there is this manual, even the new students can finish the work. But at the same time, she found the same job every day very boring. "before entering the unit every day, what can be done and what can not be done has been arranged."

In fact, as a bean hunter, Gu Qinru has to visit not only Africa, but also Central and South America, Southeast Asia, Indonesia, and other coffee-producing areas near the equator. Although it is not a very developed country and region, the conditions of different coffee producing areas are very different, which is closely related to the level of local economic and cultural development.

The conditions in Rwanda are unusually poor. Gu Qinru recalled: "when I first arrived here, I saw all the red mud soil, almost no buildings, all low bungalows, and the surface of the house was covered with grass."

Thinking of attending the cup test meeting in El Salvador for the first time, although she was stranded at the airport for a long time, the conditions in the producing area were very good. Along the way, the scenery was beautiful, and every family in the residential area planted flowers and grass, and the infrastructure was also very perfect. Gu Qinru spent a very happy few days there, and she once thought that the coffee producing areas were as romantic as El Salvador. Now the conditions are difficult, freedom is still restricted, coupled with the blocking of information, life seems particularly boring, and everyone's morale has dropped a lot.

It was not easy to finish all the cup test work, and Gu Qinru couldn't hold back. She just wants to play crazy when she is out of work. She asked around and found that there was a field project to find gorillas in the local national forest park, which sounded good, but the price was high, and she was a little hesitant.

"but they say it's something you have to go through in your life. Then this kind of character of mine, as soon as I heard this, I went crazy: 'good! I like to experience, let's experience it!'" .

So Gu Qinru and several peer judges went into the primeval jungle. Walking in the primitive jungle, the thorns all the way hurt all over, but Gu Qinru called it enjoyable. It is rare to cross a small half of the world to come here, Gu Qinru should seize every opportunity to experience different exotic customs.

In COE, El Salvador, a four-day coffee cup test was held for 31 coffee beans with a score of more than 85 selected by domestic judges, and the international judges were responsible for re-grading the beans.

Gu Qinru, who participated in the COE International Cup for the first time on behalf of China, really pinched a sweat. Because of the slightest mistake, not only will the professional level be questioned, but it may also embarrass the Chinese coffee people in front of more than a dozen other people from different countries. At the SCAA show in Seattle, an experienced senior judge threatened her: "score well, it will get you out of here."

With apprehension and expectation, he flew around for more than 40 hours, but he was told that he could not enter the country because of the visa problem. In fact, she had long worried that it would be troublesome to enter only a business visa from the United States (China had not yet established diplomatic relations with El Salvador at that time), and arrived in El Salvador a day early in order not to delay the cup test trip.

Trapped in the airport without a peer partner, no matter how to explain that the visa officer does not believe in himself, Gu Qinru is very angry. Six hours have passed and there has been no progress.

After this experience, Gu Qinru felt that she was not in a good physique, but venting her emotions would not solve the problem, so she set herself the creed of "no matter how bad the mood is, get the work done first."

After arriving at Sabine's hotel, she straightforward asked for the quietest room, tidied up a little and rushed to sleep. Coffee cup testing requires a high degree of physical, concentration, and sensory concentration, so ensure high-quality sleep.

Sipping is extremely exhausting, it makes the coffee liquid quickly atomize in the mouth, when the sense of taste, smell and imagination should be fully mobilized. Because it is a blind test, the recorded data will test your memory. For the same type of beans, if the scoring difference exceeds the prescribed range, there must be a problem. Even if everyone is already famous internationally, the assessment of coffee tasting ability is anytime, anywhere, and will not stop just because you have won the title.

For an excellent bean hunter, cup test is the foundation, and only by collecting detailed cup test data can the flavor and quality of a bean be reflected as comprehensively as possible.

Two cup spoons are usually used to measure the cup, one to scoop the coffee liquid, and the other to keep the coffee liquid from spilling. Gu Qinru has two cup test spoons of her own, and in order to protect her "lucky weapon", she also made a leather cup test spoon bag. The soft cowhide is wrapped in two silver-plated cup spoons, and the leather becomes soft and soft with a gentle luster after the constant touch of the hand.

Each coffee producing area has coffee estates of different sizes and colors. The so-called "ten miles of different rain, a hundred miles of different wind", sometimes subtle differences in natural conditions will lead to different coffee bean flavors, not to mention artificial cultivation methods and post-processing differences. Gu Qinru cherished the opportunity to search for beans herself. She usually rushed from manor to manor without stopping, so she carried her cup and spoon bag with her." It took three years from being perfunctory to being sought after.

In 2011, coffee hunter Xu Guoming set foot on Panamanian soil for the first time, just like Alice fell into a rabbit hole. "only then did I know that I had been cheated."

It was almost summer, and the coffee tree in front of him had lost all its fruit, and the evergreen trees of Rubiaceae had been cut no more than two feet high, and their leaves were dark green, and the sunlit parts were coated with white wax. Xu Guoming plucked away the branches and leaves to examine them carefully, and there was no fruit hidden in them.

A round trip from Taiwan to Central America costs at least 30,000 yuan. On this trip, the government subsidized 10,000 yuan, which Xu Guoming thought was a pie falling from the sky. The night before his departure, he was so excited that he couldn't sleep: "Panama has the best coffee beans in the world."

However, most of the itinerary has passed, but the inspection has not yet come to the topic: "having dinner with various officials every day and saying 'here we come' for the government, we are a group of people carrying sedan chairs." Xu Guoming wanted to communicate with farmers about how to grow coffee trees and the variety of beans. He was secretly prepared to be laughed at: "but those farmers will only take out bad beans and ask me,'do you want to buy it or not?'"

He was a little angry and was forced to take several pictures with the two-foot-tall coffee trees in the manor: "are we here to see the trees?" You might as well go to Yunnan, take a picture with the coffee tree, and then ps and say that you have come to Panama. "

Soon he knew that he had been graded by the owner of the manor. The coffee picking season in Central America is from November to February of the following year. Coffee ranchers are more willing to save time and the best coffee beans for visitors in January or February. The following year, Xu Guoming contacted the owners of various famous coffee farms and respectfully sent an email asking: can we go and buy beans? The response was surprisingly uniform: come on, April or May is fine. We were too busy before.

"other manors just haven't come into the vision of China yet. in fact, every landowner in Panama has his own very good and unique beans."

Xu Guoming and his "Black Gold" international bean-hunting organization have the largest number of international bean-hunting organizations that travel to Central America every year. They have strong purchasing power and discerning ability, and are soon recognized by the local landowners.

This year, the old man of Jensen Coffee Manor asked him: would you like to send a plane to pick you up? Xu Guoming thought it was a joke. It's a long journey from Asia to Panama. You have to fly to Los Angeles and then transfer to get there. He has common sense about how big a private plane is. "probably like Jackie Chan and Zhao Benshan, he can't fly that far."

After arriving at Jensen by himself, Xu Guoming was dumbfounded. The old man unexpectedly has a runway of more than 3000 meters. The plane parked on it is an Airbus 320.

Panama produces the best coffee beans in the world. Maybe the local coffee beans are so good that the landowner is so spoiled. Among them, there is a common disdain chain distinguished by reception time: those who come in February are distinguished guests, those who come in March and April are counted as observations, and those in May and June are for show.

It took Xu Guoming three years from being exiled in May and June to being invited into his home for dinner by the landowner.

Panama and Costa Rica are neighboring countries, and they both have rich microclimates, which provide unique conditions for the growth of different kinds of coffee.

Panama, located at 9 degrees north latitude, seems to be more blessed than Costa Rica. Among the many volcanoes in both places, rocks from early eruptions seem to have flowed to Costa Rica, while fertile and moist soil has flowed to Panama. These soils are rich in nutrients and provide excellent innate conditions for the planting and cultivation of coffee peculiar to Panama. All this makes Panamanian coffee extremely diverse, naturally with jasmine, citrus, berries, caramel, special sweetness, vanilla, chocolate and other flavors.

Coffee beans are produced in many countries in Central America. Since 2011, Xu Guoming has gone to Central America at the beginning of every year to look for new beans. So far, he has visited 4,500 farms. Costa Rica and Panama are the places he must visit every year.

Costa Rica has small coffee growers with a large number of farmers, with tens of thousands of small ranchers, while Panama prefers large and medium-sized estates. Because of the unique climate, the quality of beans produced in Panama is narrowly better than that in Costa Rica, and every manor is more inclined to use the traditional bean treatment to maintain the original flavor of the beans. In Costa Rica, because there are too many units dealing in coffee beans, everyone is willing to work on the treatment method in order to compete.

"you've only heard of a few treatments, sun exposure, water washing and honey treatment, right? After you went to Costa Rica, you found that there are dozens of ways to treat coffee beans alone. " Each new treatment excites Xu Guoming: "this year we see red wine treatment, that is, red wine is used to deal with beans."

The nighty plus coffee bean brand, which became popular around the world a few years ago, is famous for producing coffee beans with a strong mango flavor. They have a factory in Panama, but they refuse to visit. "as soon as you smell it, there is a very strong smell of mango. You don't know how. It's their secret." On a hill, coffee plantations are not adjacent to each other and are scattered loosely. Jeeps were a good means of transportation, and a good manor would provide a better fleet of cars and even guns. In Guatemala and Honduras, the government sends troops to protect coffee traders like Xu Guoming throughout. Because, in the mountains where the coffee trade takes place, there is also a drug trade and a large number of rebels are hidden. The armed troops protected Xu Guoming at the side. " It really scared me. It's a real gun. Someone snatched coffee beans for $5 and $8. I'll take as much as I can."

Beyond that, the richness of Central America's vegetation is fascinating. They went from the foot of the mountain to the heart of the mountain, from the heart of the mountain to the top of the mountain. Some coffee estates also function as resorts. "who's wearing perfume?" Even though they knew it was forbidden, some people couldn't help sighing. The smell doesn't come from some kind of fragrance, even if it smells like Chanel 5. Everyone, including Xu Guoming, is curious about this treatment that inspires the fragrance of coffee beans. "as a result, it doesn't taste like that."

These feelings can only be obtained through cup testing. The cup test is Xu Guoming's main work as a coffee hunter on his bean hunt. With a keen sense of smell and curiosity, he holds a pale form for recording.

Over the past two years, letters from Xu Guoming and his entourage have poured in as long as they went to Central America to look for beans and invited them to visit the farm. Panamanian state television even followed suit, "We are the largest bean-hunting group in the world."

A book changed the course of life.

In the late 1970s, Xu Guoming, who was born in Taoyuan, Taiwan, was a teenager and used to hang out in cafes near his school.

"people who love to read books every day, and they don't have the idea of spending this kind of money." At that time, individual coffee was already popular in Taiwan. In the cafe where Xu Guoming often goes, there is a mixture of Mantenin and Brazil, called Mamba. Today, middle-aged people over the age of 40 or 50 in Taiwan still drink this kind of coffee. "it has become a kind of history."

Xu Guoming doesn't think Mamba tastes good. He doesn't think any coffee tastes good. Just because he wants to keep up with the fashion, at the same time, he wants to go to the cafe to pick up girls. At that time, his daily pocket money was NT $100, and 2/3 of it was spent on the mamba.

Later, he went to do military service. American coffee is served round the clock in the army. "like dishwashing water." He doesn't like coffee at all.

After retiring from the army at the age of 21, Xu Guoming started a publishing and printing business. He remembers very clearly that the Coffee Map was published by him. "I was either in the cafe or on my way to the cafe." This book is known as the "Coffee Bible" of the three places on both sides of the strait. The author Zhang Yao is known as the godfather of coffee, and many people's love of coffee begins from this. The book changed the course of his life and let him know for the first time that outside Taiwan, cafes could be something else, and that European-style, intricate decorations, beautiful log pillars and space for coffee were deeply attracted to him.

The following year, he went to Switzerland to import machines for the company. He can't speak German. "Coke" is the simplest pronunciation, but he is really tired of drinking Coke at every meal. Xu Guoming listened to the pronunciation of the guests at the next table and ordered an after-dinner drink: Kaffee.

"it tastes different from that in Taiwan. I like it." After that, he kept ordering coffee.

In 1992, Taiwan opened its first direct flight to Amsterdam. In order to promote sales, airlines offer low discounts and free accommodation. He immediately tricked his friend into going with him: "I just want to see the cafe, no matter what language he speaks." After that, he went to Europe as soon as he was free. The experience of visiting a cafe made him more and more unable to contain himself. He began to use his off-work time to go to the Japanese hand Cafe near his home to learn.

The master is a Japanese man of 5 or 60 years old. in the first three months, he only asked Xu Guoming to flush the pot with a hand of more than 7 jin and pour water into the tank. He later wanted to learn how to siphon. It looks like magic, making Xu Guoming eager to try. At first, according to the master, he carefully took notes every day: air temperature, humidity, water temperature. He couldn't write any more in a few days, so he began to turn over the previous records, make a little change every day, and write numbers in the book.

The master had already discovered that he was faking it, but he didn't break it. Xu Guoming asked the master, "how long will it take to learn to siphon?" The master replied, "eight years." He hardly experienced any ideological struggle and decisively extinguished the flames that he wanted to learn siphon: "I just want to simply drink coffee. I don't want it to get so complicated in the end."

A 30-year-old dreamer

Coffee is used by him as a hobby and develops smoothly. During this period, he made millions from his business, and he also learned the art of traditional Japanese hand-made coffee. He began to get tired of the developed cities: "my best friend is from Qingdao. I have been to Qingdao and like it very much." At the age of 30, Xu Guoming fled his big city. "I have something I like, and the money is ready again." He thought he had everything and it was time to live a happy life: close his business and open a coffee shop in Qingdao, the seaside. "that's all the happiest life can be."

Xu Guoming's adventurous spirit was confirmed once again: everyone he knew in Qingdao warned him that it was unreliable: you had to at least sell outside the market and go to a crowded place.

However, despite his friends 'resistance, he chose a 700-square-meter shop on Donghai Road to be a pure Japanese cafe selling only hand-brewed coffee. He thought to himself, what do you know? Such a cultural and meaningful thing must be opened in a beautiful place.

In 2000, opposite Qingdao's Eastern Hospital, Xu Guoming's "Ishiyaki" Japanese-style hand-brewed cafe with its back against the sea opened. But as he poured fresh ground coffee into his hand-made pot, customers came up to him and asked,"Why do you make instant coffee like this? Do you use Maxwell or Nestle?"

In 2000, the most popular drink in the Mainland was "Rising Sun" iced tea. Its spokesmen were Chu Qi and Chu Tong brothers. They sang "Flying higher and higher, flapping their wings" and became the dream lovers of all girls. And what is hand-brewed single-serve coffee? No one knows.

Half a year after the opening of the "Stone Burn" cafe, Qingdao had its first Shangdao coffee, which was packed every day. Of course, he was angry. Shangdao was selling the Siphon Coffee that he had chosen to give up.

His café never made a profit: "If the target turnover for a day is 1000, then reaching 700 yuan is already the best time." He struggled for three and a half years before finally closing, losing miserably: "I'm almost broke."

On the day he closed the door, regular customers did not know that this incident happened suddenly. Familiar guests came to drink coffee and were stopped by Xu Guoming, who was guarding the door to move things. "A customer is crying." Xu Guoming also wanted to cry, but he held back.

Xu Guoming was confused. It was obviously something good, so why didn't everyone like it?

He couldn't figure out this problem and suffered from depression. However, he couldn't return to Taiwan because he was afraid that others would know that he had failed. he wanted to die, but he was afraid that such news would appear in the newspapers: "taiwan businessmen who went bankrupt committed suicide. i don't want to be told that."

He hid in a village in Qingdao, where he rented a bungalow and baked a small amount of coffee beans with a popcorn machine. "Start with one or two guests."

That was Xu Guoming's biggest fall, and later he summed it up as "the great misfortune of youth."

His clubhouse today is only a few minutes 'drive from the "stone burn" cafe more than ten years ago, but it no longer faces the sea. From the window on the first floor of the clubhouse, Jiaozhou Bay can be seen. Xu Guoming used to be a sociable person, but now he is not. "It's the after-effects of that blow. I welcome everyone to come to me, but I won't go out to socialize anymore."

He didn't want to bring up that failed past. Indeed, he was occasionally very silent, and occasionally very eager to say something. At the dinner table, he was always the one who listened. When his speech was interrupted, he did not argue, but naturally stopped talking. However, there was still ambition in the corner of his eyes to finish, but he no longer allowed himself to do so.

He is familiar with each customer's preferences, which he records in a book. He customizes fine coffee beans for customers to suit them. All customers rely on word of mouth. "What kept him going was still curiosity about good coffee beans."

Mr. Hu Shi said: The difference between people lies in how to use them outside eight hours. Those who have time cannot succeed, those who squeeze time can succeed. Eight hours to decide the present, eight hours to decide the future. What kind of thoughts, what kind of life. It's not that society develops too fast, it's that our thinking is too slow, why our thinking is too slow, it's that we don't keep up with learning.

There are two great sorrows in life: no love after marriage, and no study after graduation. To refuse to learn is to refuse to grow. A person does not learn, can not keep up with the pace of the times, what on earth to learn? Not to learn the skills of working, but to learn the ability to do things.

There will always be people better than you and people who work harder than you, and people who are better than you and harder than you. The key still depends on self-recognition and positioning. Find your own pace and direction of effort, and then move ~
