Today, we introduce the story of two coffee men, like you and me, an ordinary person:

A cup test shrouded in gunfire

In the summer of 2015, the dry season has arrived in the coffee and bean producing region of Rwanda, Africa. Gu Qinru and her team of international judges are stationed here, focusing on coffee cup testing.

Recently, there has always been a power outage from time to time, and the sound of the abrupt stop of the bean dryer sank with Gu Qinru's heart.

The power outage in the middle of baking beans means that all the coffee beans in this pot have to be reworked. As a result, the work efficiency of Gu Qinru and her colleagues was greatly reduced, and some people began to complain.

"the most important thing is to overcome bad emotions and get the job done." She kept telling herself.

There was a sudden sound of gunfire outside the window, and the house quieted down instantly, and no one knew what had happened. The security guards motioned to everyone to stay calm, stay where they were, and then quickly assembled outside the house. Everyone looked at each other. After a while, they came back and said there was nothing wrong. After the cup test, they asked everyone to go back to the hotel to have a rest and not to walk around at will. The crowd muttered.

This is the second time that Gu Qinru participated in the COE (Cup of Excellence) Coffee Raw Bean Cup Test as an international judge, along with coffee experts from more than a dozen other countries and regions. In the past, in the turbulent raw bean producing areas, they had been protected by the police with guns, but they had never encountered any dangerous situation. This time she was completely restricted, and at first she thought it was a bit of an exaggeration, until the next day they heard that there was a shootout in the street the day before, and the president's brother was killed.

Gu Qinru suddenly realized that the problem of searching for beans in the production area was not just as simple as traveling and exhausting physical strength.

Girls are stable.

Before making fine coffee, Gu Qinru, an English graduate, worked as simultaneous interpreter and bank Loan-admin successively. Simultaneous interpretation requires a high degree of concentration, rapid absorption, processing and transmission of information. Competition in the industry was fierce. Gu Qinru did not want to be compared, so she studied hard to improve her professional ability. However, she felt that the passive translation work was lacking something for her.

In her early twenties, she couldn't see the future at a glance, and her daily high-intensity work made her nervous for a time. Many of my classmates went to work in the bank. They said the atmosphere was relaxed and the treatment was good. Family members also painstakingly persuaded all day: "It's good to have a stable job, why do girls fight so hard?"

Gu Qinru couldn't resist these voices and entered the bank. The bank's work was indeed much easier. Every day, he received the customer manager's data, operated the internal system, and approved and archived it.

In order to improve her work efficiency, Gu Qinru had written all the codes of the systems in the bank and how to operate them into a manual. According to her, as long as she had this manual, even new students could complete their work. But at the same time, she felt that the routine of daily work was extremely boring. "Before entering the unit every day, what can and cannot be done has already been arranged."

His body, which had been resting comfortably in the bank, was about to numb, but because of some fresh thoughts, he became agitated again.

" A person will eventually choose a profession that matches her personality."

Who says girls can't spell? Gu Qinru fought this way to Africa.

In fact, as a bean hunter, Gu Qinru has to visit not only Africa, but also Central and South America, Southeast Asia, Indonesia, and other coffee-producing areas near the equator. Although it is not a very developed country and region, the conditions of different coffee producing areas are very different, which is closely related to the level of local economic and cultural development.

The conditions in Rwanda are unusually poor. Gu Qinru recalled: "when I first arrived here, I saw all the red mud soil, almost no buildings, all low bungalows, and the surface of the house was covered with grass."

Thinking of attending the cup test meeting in El Salvador for the first time, although she was stranded at the airport for a long time, the conditions in the producing area were very good. Along the way, the scenery was beautiful, and every family in the residential area planted flowers and grass, and the infrastructure was also very perfect. Gu Qinru spent a very happy few days there, and she once thought that the coffee producing areas were as romantic as El Salvador. Now the conditions are difficult, freedom is still restricted, coupled with the blocking of information, life seems particularly boring, and everyone's morale has dropped a lot.

It was not easy to finish all the cup test work, and Gu Qinru couldn't hold back. She just wants to play crazy when she is out of work. She asked around and found that there was a field project to find gorillas in the local national forest park, which sounded good, but the price was high, and she was a little hesitant.

"but they say it's something you have to go through in your life. Then this kind of character of mine, as soon as I heard this, I went crazy: 'good! I like to experience, let's experience it!'" .

So Gu Qinru and several peer judges went into the primeval jungle. Walking in the primitive jungle, the thorns all the way hurt all over, but Gu Qinru called it enjoyable. It is rare to cross a small half of the world to come here, Gu Qinru should seize every opportunity to experience different exotic customs.

At the COE in El Salvador, 31 beans that scored 85 or more were pre-selected by the Salvadoran national judges for a four-day coffee cup test, and the international judges were responsible for re-scoring the beans.

Gu Qinru, who represented China in the COE International Cup for the first time, was really sweating. Not only will the professionalism be questioned, but Chinese coffee people may be disgraced in front of people from dozens of different countries. At the SCAA exhibition in Seattle, there were experienced judges who threatened her: "Score well, if you are not within the range, you will get lost."

With anxiety and expectation, she flew for more than 40 hours, but was told that she could not enter the country because of visa problems. Gu Qinru was anxious. In fact, she had long been worried that it would be very troublesome to enter the country only with a business visa from the United States (China had not yet established diplomatic relations with El Salvador at that time). In order not to delay the cup test trip, she specially arrived in El Salvador one day earlier.

Trapped at the airport without a companion, no matter how much she explained, the visa officer did not believe her. Gu Qinru was very angry. The staff member of Safang actually started speaking Spanish during the negotiation. She could not understand it at all, and the situation was once deadlocked. Six hours passed and nothing happened.

"To tell you the truth, my heart was racing."

She didn't know if there was a way out for everyone, but at the last moment, Gu Qinru had an idea and thought of the person in charge of COE, so she urgently sought help from him. Later, the American made a phone call to the Ministry of Foreign Affairs of Samoa to solve this problem.

After this experience, Gu Qinru felt that she wasn't a smooth sailing physique, but she couldn't solve the problem by venting her emotions. Therefore, she set a creed for herself: "No matter how bad the mood is, finish the work first."

When she arrived at Safang's hotel, she asked for the quietest room, tidied up, and fell asleep quickly. Coffee cup testing requires a high degree of concentration of the body, attention and senses, so it is necessary to ensure high-quality sleep.

"The preliminary round of the international judging panel will be divided into two rounds. The first and second days will be the first round, the third day will be the second round, and the fourth day will be the final round of the top ten rankings. A minimum of 5 cups of coffee and a maximum of 10 cups of coffee are tested in the same session. Each cup of coffee will have 4 cups to be tested simultaneously. Take a group of 10 coffees as an example. My personal habit is to drink four rounds, from hot to cold, to test the acidity, sweetness, flavor, body and flawless flavor of coffee at different temperatures. So a group of at least 160 sips. If you smoke four times a day, you will really feel weak in your abdomen and black lips (prolonged exposure to coffee solution)."

Sipping is extremely exhausting, it makes the coffee liquid quickly atomize in the mouth, when the sense of taste, smell and imagination should be fully mobilized. Because it is a blind test, the recorded data will test your memory. For the same type of beans, if the scoring difference exceeds the prescribed range, there must be a problem. Even if everyone is already famous internationally, the assessment of coffee tasting ability is anytime, anywhere, and will not stop just because you have won the title.

For an excellent bean hunter, cup test is the foundation, and only by collecting detailed cup test data can the flavor and quality of a bean be reflected as comprehensively as possible.

Two cup spoons are usually used to measure the cup, one to scoop the coffee liquid, and the other to keep the coffee liquid from spilling. Gu Qinru has two cup test spoons of her own, and in order to protect her "lucky weapon", she also made a leather cup test spoon bag. The soft cowhide is wrapped in two silver-plated cup spoons, and the leather becomes soft and soft with a gentle luster after the constant touch of the hand.

Each coffee producing area has coffee estates of different sizes and colors. The so-called "ten miles of different rain, a hundred miles of different wind", sometimes subtle differences in natural conditions will lead to different coffee bean flavors, not to mention artificial cultivation methods and post-processing differences. Gu Qinru cherished the opportunity to search for beans herself. She usually rushed from manor to manor without stopping, so she carried her cup and spoon bag with her." Be ready to enter combat mode at any time." She wiped the two spoons meticulously, and the fine scratches on them witnessed her struggle from a coffee white to today's bean hunter.

" There are many inflection points in a person's life journey. Some people turn around and go astray. Gu Qinru has done three different types of work, but she still maintains her original heart. She is serious, focused and gives her all."

It took three years from being perfunctory to being sought after.

In 2011, coffee hunter Xu Guoming first set foot on Panamanian soil, like Alice falling down a rabbit hole. " I'm confused. I just realized that I was cheated."

It was almost summer, and the coffee trees before him had lost all their fruit, and these evergreen trees of the Rubiaceae family had been cut to no more than two feet high, and their leaves were dark green, and the sunlit parts were coated with white wax. Xu Guoming opened the branches and leaves to check carefully, there are no fruits hidden in them.

A round trip from Taiwan to Central America costs at least 30,000 yuan. This time, the government subsidized 10,000 yuan. Xu Guoming thought it was a pie falling from the sky. The night before he left, he was so excited he couldn't sleep: "Panama has the best coffee beans in the world."

However, more than half of the trip has passed, but the inspection has not yet entered the main theme: "Every day we eat with various officials and say 'we are here' for the government. We are just a group of people carrying sedan chairs." Xu Guoming wanted to communicate with farmers and ask them how to grow coffee trees and the varieties of beans. He was secretly prepared to be laughed at: "But those farmers would only take out bad beans and ask me,'Do you want to buy it or not?'"

Angered, he was forced to take pictures of the two-foot coffee trees on the estate."Are we here to see the trees? Why don't we go to Yunnan, take a photo with the coffee tree, and then PS it to Panama?"

Soon, he knew that he had been graded by the manor master. The coffee harvest season in Central America runs from November to February. Coffee plantation owners are more willing to leave time and the best coffee beans to visitors in January and February. The following year, Xu Guoming himself contacted the owners of various famous coffee plantations and respectfully e-mailed: Can we go buy beans? The responses were surprisingly uniform: Come on, April or May is fine, we were too busy before.

"what were they up to before? They are busy giving their best works to the buyers they really value. "

This year, he continued to be despised by the manor owner: he went to the manor to watch the flowers, tested a few kinds of beans casually, and then was taken to the restaurant opened by the manor owner himself-- not to treat, but to pay for Xu Guoming.

"it's not personal. They have to think highly of you and think highly of you before they really ask you to go to his house for dinner."

Xu Guoming was very upset that he did not want to be graded hastily. "then we have to find another way." He gave up some of the well-known manors in the country and tried to get in touch with the slightly better-known owners. He has a really strong purchasing power, and this step worked out quickly. "other manors just haven't come into the vision of China yet. in fact, every landowner in Panama has his own very good and unique beans."

Xu Guoming and his "Black Gold" international bean-hunting organization have the largest number of international bean-hunting organizations that travel to Central America every year. They have strong purchasing power and discerning ability, and are soon recognized by the local landowners.

This year, the old man of Jensen Coffee Manor asked him: would you like to send a plane to pick you up? Xu Guoming thought it was a joke. It's a long journey from Asia to Panama. You have to fly to Los Angeles and then transfer to get there. He has common sense about how big a private plane is. "probably like Jackie Chan and Zhao Benshan, he can't fly that far."

After arriving at Jensen by himself, Xu Guoming was dumbfounded. The old man unexpectedly has a runway of more than 3000 meters. The plane parked on it is an Airbus 320.

"that's how rich he is." Compared with this, being taken care of by Panamanians made him scream: "he invited us to his house for dinner." Two years ago, he had to go to the restaurant run by the manor owner, but asked him to pay for the "banquet" scene vividly: "it shows that they recognize you."

Panama produces the best coffee beans in the world. Maybe the local coffee beans are so good that the landowner is so spoiled. Among them, there is a common disdain chain distinguished by reception time: those who come in February are distinguished guests, those who come in March and April are counted as observations, and those in May and June are for show.

It took Xu Guoming three years from being exiled in May and June to being invited into his home for dinner by the landowner.

Panama and Costa Rica are neighboring countries, and they both have rich microclimates, which provide unique conditions for the growth of different kinds of coffee.

Panama, located at 9 degrees north latitude, seems to be more blessed than Costa Rica. Among the many volcanoes in both places, rocks from early eruptions seem to have flowed to Costa Rica, while fertile and moist soil has flowed to Panama. These soils are rich in nutrients and provide excellent innate conditions for the planting and cultivation of coffee peculiar to Panama. All this makes Panamanian coffee extremely diverse, naturally with jasmine, citrus, berries, caramel, special sweetness, vanilla, chocolate and other flavors.

Coffee beans are produced in many countries in Central America. Since 2011, Xu Guoming has gone to Central America at the beginning of every year to look for new beans. So far, he has visited 4,500 farms. Costa Rica and Panama are the places he must visit every year.

Costa Rica has small coffee growers with a large number of farmers, with tens of thousands of small ranchers, while Panama prefers large and medium-sized estates. Because of the unique climate, the quality of beans produced in Panama is narrowly better than that in Costa Rica, and every manor is more inclined to use the traditional bean treatment to maintain the original flavor of the beans. In Costa Rica, because there are too many units dealing in coffee beans, everyone is willing to work on the treatment method in order to compete.

"you've only heard of a few treatments, sun exposure, water washing and honey treatment, right? After you went to Costa Rica, you found that there are dozens of ways to treat coffee beans alone. " Each new treatment excites Xu Guoming: "this year we see red wine treatment, that is, red wine is used to deal with beans."

The nighty plus coffee bean brand, which became popular around the world a few years ago, is famous for producing coffee beans with a strong mango flavor. They have a factory in Panama, but they refuse to visit. "as soon as you smell it, there is a very strong smell of mango. You don't know how. It's their secret." Xu Guoming was very curious, but he could only wander outside the nighty plus factory. He sniffed hard and tried to determine where the smell came from, but he still couldn't find the answer: "but as soon as I smelled it, I could at least be sure that they didn't use any chemical spices, which was a natural treatment." He was satisfied to get this result. Xu Guoming felt strongly pleased with every small step in the treatment of coffee beans, and he was ready to have a long way to go.

On a mountain, coffee farms are not adjacent to each other and are loosely distributed. Jeeps are good means of transportation, and manors with good conditions will provide better convoys and even guns. In Guatemala and Honduras, the government sends troops to protect coffee traders like Xu Guoming. Because, in the various mountains where the coffee trade takes place, there is also a drug trade and a large number of rebels hidden. Troops armed with guns protected Xu Guoming on the side. "it really scared me, the real gun, someone for $5 and $8, to grab coffee beans, can grab a little bit is a little bit."

In addition, the rich vegetation of Central America is fascinating. They went down from the foot of the mountain to the hinterland and from the hinterland to the top of the mountain. Some coffee farms also serve as resorts. Jensen Manor, which has to fly a plane to pick up Xu Guoming, is one of the best cup rooms in Panama. Every cup test is performed by violinists, and people face a huge window facing Panama's proud Baru volcano. Jensen Coffee Manor, which is also a travel company, has a shuttle bus for tourists.

What amazes Xu Guoming even more is Morgan Manor, which is run by a white couple and looks like a scenic nursing home. It is said that the manor itself belongs to a big Hollywood star. When he asked curiously who was behind it, the white couple smiled and said nothing.

"Morgan Freeman, I guessed."

In general, people who enter the coffee farm are not allowed to wear anything with any smell, nor are they allowed to apply mosquito repellent. So this year, when some kind of coffee bean was powdered by an ancient grinding machine, everyone turned around.

It's a perfume smell, and it slowly spreads around people.

"who's wearing perfume?" Even though they knew it was forbidden, some people couldn't help sighing. The smell doesn't come from some kind of fragrance, even if it smells like Chanel 5. Everyone, including Xu Guoming, is curious about this treatment that inspires the fragrance of coffee beans. "as a result, it doesn't taste like that."

These feelings can only be obtained through cup testing. The cup test is Xu Guoming's main work as a coffee hunter on his bean hunt. With a keen sense of smell and curiosity, he holds a pale form for recording.

Smell it first. "it's balsam pear. Just write balsam pear on the form."

Then brew it directly with hot water and smell it again. "if it smells like lychees, cantaloupes and leeks, you have to write it down."

Then scoop it with a cup spoon and inhale it into the mouth in a special way to achieve the atomization effect. "record what it smells like at this time."

Rose, citrus, lemon peel, plum, strawberry, these flavors are usually the most basic. The smell of jasmine is a special aroma found by Xu Guoming this year, but the most expensive one is not this one: "the most expensive is a passion fruit flavor."

At the end of the day, he has smelled and tasted dozens of kinds of coffee. His reaction to beans that were overfermented or with impurities was amazing: "Oh, my God, why is this thing so choking?" Poor-quality coffee beans smell like wood dregs and sometimes hospital iodine. "but for some people who don't know, they still think that the taste is very special and they like it very much."

The nose will be tired, and when tired, the sense of smell will temporarily fail. Xu Guoming will bury his face in his arms and smell his body smell. "this is the most stable flavor and can restore the sense of smell."

Over the past two years, letters from Xu Guoming and his entourage have poured in as long as they went to Central America to look for beans and invited them to visit the farm. Panamanian state television even followed suit, "We are the largest bean-hunting group in the world."

A book changed the course of life.

In the late 1970s, Xu Guoming, who was born in Taoyuan, Taiwan, was a teenager and used to hang out in cafes near his school.

"people who love to read books every day, and they don't have the idea of spending this kind of money." At that time, individual coffee was already popular in Taiwan. In the cafe where Xu Guoming often goes, there is a mixture of Mantenin and Brazil, called Mamba. Today, middle-aged people over the age of 40 or 50 in Taiwan still drink this kind of coffee. "it has become a kind of history."

Xu Guoming doesn't think Mamba tastes good. He doesn't think any coffee tastes good. Just because he wants to keep up with the fashion, at the same time, he wants to go to the cafe to pick up girls. At that time, his daily pocket money was NT $100, and 2/3 of it was spent on the mamba.

Later, he went to do military service. American coffee is served round the clock in the army. "like dishwashing water." He doesn't like coffee at all.

After retiring from the army at the age of 21, Xu Guoming started a publishing and printing business. He remembers very clearly that the Coffee Map was published by him. "I was either in the cafe or on my way to the cafe." This book is known as the "Coffee Bible" of the three places on both sides of the strait. The author Zhang Yao is known as the godfather of coffee, and many people's love of coffee begins from this. The book changed the course of his life and let him know for the first time that outside Taiwan, cafes could be something else, and that European-style, intricate decorations, beautiful log pillars and space for coffee were deeply attracted to him.

The following year, he went to Switzerland to import machines for the company. He can't speak German. "Coke" is the simplest pronunciation, but he is really tired of drinking Coke at every meal. Xu Guoming listened to the pronunciation of the guests at the next table and ordered an after-dinner drink: Kaffee.

"it tastes different from that in Taiwan. I like it." After that, he kept ordering coffee.

In 1992, Taiwan opened its first direct flight to Amsterdam. In order to promote sales, airlines offer low discounts and free accommodation. He immediately tricked his friend into going with him: "I just want to see the cafe, no matter what language he speaks." After that, he went to Europe as soon as he was free. The experience of visiting a cafe made him more and more unable to contain himself. He began to use his off-work time to go to the Japanese hand Cafe near his home to learn.

The master is a Japanese man of 5 or 60 years old. in the first three months, he only asked Xu Guoming to flush the pot with a hand of more than 7 jin and pour water into the tank. After pouring for a month, Xu Guoming was so bored that he couldn't help asking the master, "when can I learn to make coffee?" When the master heard this, he replied solemnly, "all right, don't come tomorrow. Go back." This is no good, he had to continue to pour water silently. When his patience was on the verge of collapse, the master finally began to teach him how to do hand flushing.

He later wanted to learn how to siphon. It looks like magic, making Xu Guoming eager to try. At first, according to the master, he carefully took notes every day: air temperature, humidity, water temperature. He couldn't write any more in a few days, so he began to turn over the previous records, make a little change every day, and write numbers in the book.

The master had already discovered that he was faking it, but he didn't break it. Xu Guoming asked the master, "how long will it take to learn to siphon?" The master replied, "eight years." He hardly experienced any ideological struggle and decisively extinguished the flames that he wanted to learn siphon: "I just want to simply drink coffee. I don't want it to get so complicated in the end."

A 30-year-old dreamer

Coffee is used by him as a hobby and develops smoothly. During this period, he made millions from his business, and he also learned the art of traditional Japanese hand-made coffee. He began to get tired of the developed cities: "my best friend is from Qingdao. I have been to Qingdao and like it very much." At the age of 30, Xu Guoming fled his big city. "I have something I like, and the money is ready again." He thought he had everything and it was time to live a happy life: close his business and open a coffee shop in Qingdao, the seaside. "that's all the happiest life can be."

Xu Guoming's adventurous spirit was once again confirmed: everyone he knew in Qingdao warned him that it was unreliable: you had to at least sell outside the market and go to crowded places.

However, despite the hindrance of his friends, he chose a 700-square-meter shop on Donghai Road to become an all-Japanese coffee shop selling only hand-brewed coffee. He thought to himself, what do you know? of course something with such culture and connotation should be opened in a beautiful place.

In 2000, opposite the eastern hospital in Qingdao, Xu Guoming's "stone burning" Japanese hand-made cafe with his back against the sea opened. But when he poured water into the fresh coffee powder with his hand, the guests leaned over and asked, "Why do you want to make instant coffee like this?" Do you use Maxwell or Nestle? "

In 2000, the most popular drink in the mainland was "rising Sun rising" iced tea. Its spokesman is Chuqi, Chu Tong two brothers, they sing "fly higher and higher, flapping their wings", become the lovers of all girls' dreams. And what is hand-brewed coffee? No one knows.

Six months after the opening of Shi Shao Cafe, Qingdao has its first coffee shop on the island, which is full of seats every day. Of course, he was glamorous. The siphon coffee he chose to give up was sold on the island.

None of his cafes are profitable: "if the target turnover is 1000 yuan a day, it is already the best time." He held on painfully for three and a half years, and finally chose to close the door, losing miserably: "I'm almost broke."

On the day he closed the door, the regular customers did not know it. Suddenly, the familiar guests came to drink coffee and were stopped by Xu Guoming, who was at the door to carry things. "A guest cried." Xu Guoming also wanted to cry, but he always put up with it.

Xu Guoming is confused, it is obviously a good thing, why don't people like it?

He couldn't figure it out, so he got depressed. However, he could not go back to Taiwan because he was afraid that others would know that he had failed. He wanted to die, but he was afraid that such news would appear in the press: "I don't want to be told that Taiwanese businessmen go bankrupt and commit suicide."

He hid in a village in Qingdao and used a popcorn machine to bake a small amount of coffee beans in his rented bungalow. "start with one or two guests."

The Taiwan Chamber of Commerce in Qingdao holds dinners regularly. That's what Xu Guoming fears most: "if you ate his treat today, will you invite him back tomorrow?" He has no money.
