Injerto White Stone Rose Summer in Incht, Guatemala
EL Injerto, the most famous coffee farm in Guatemala, produces two rose summer varieties, one in Panama and the other in Malawi. Panamanian rose summer seed from the emerald estate, after careful care, has finally become Incht after the Pacamara beans, the most popular coffee, the bidding price is even higher than the always leading Pacamara.
The rose summer bid by Sang Ho Park is Panama Rose Summer, named "newly planted Central American Rose Summer" (Young Gesha Central America) by Incht, from Pe ñ a Blanca, a very remote micro-producing area of the manor, located under a huge cliff overlooking the beautiful Incht Valley. Whitestone is a newly developed Rose Summer producing area, which was harvested only for the second time last year, and the seeds came from La Calaca, the most famous Rose Summer producing area in Incht. Classified by Incht as the second generation of rose summer, it is lot # 3 in the manor's own global bid, which is different from the African rose summer batch from Malawi.
Incht Manor, located on the Huehuetenango plateau of Guatemala, has won nine awards and five championships at the CoE Cup in Guatemala, most recently in 2015. Incht was first famous for its bourbon beans, then a few years for Pacamara, then Geisha, this year's 2017 extraordinary Cup, Incht's Rose Summer won second place! This rose summer is 2016 Incht Manor bid lot # 3.
Incht Injerto, named after the local fruit, began to grow coffee on the estate in 1900, run by the Aguirre family, and is now in its fourth generation. The manor covers an area of 720 hectares, with coffee-growing areas ranging from 4800 to 6500 feet. to this day, the manor still retains a large area of pristine rainforest, covering an area of 470 hectares, which is unmatched by other estates. Shade planting, there are different plants covering coffee-producing areas, so it has been highly certified by the tropical rain forest.
The most amazing thing about Incht lies not only in winning many bids, but also in the diversity of coffee beans. In addition to the world-famous Pacamara, Incht can send out players such as Rose Summer, Round beans, Elephant beans, and even Mocha. This is closely related to the manor's careful study of different microclimates, soils, coffee beans and the use of science and technology. Starting from this year, they have QRcode on every bag of raw beans, allowing the baker to track down the origin information at any time, which can be said to be a major breakthrough in the coffee industry.
Incht is also one of the few manors with its own online bidding, which is on a par with the Emerald Manor of Panama and is a must for raw bean merchants all over the world. Since 2011, Incht has offered competitive bids for the best quality coffee batches, called Reserva del Comendador ®, which are painstakingly processed from breeding, planting, harvesting to post-production. During the harvest period from January to April each year, workers with twice the local wage are employed and only ripe cherries are harvested in an independent washing plant. Each batch is placed in a fermentation barrel for 36 to 48 hours, and then dried in the sun for 7 days, or 70 hours. Finally, the Guardiola dryer is used to dry at 45 °C so that the moisture content reaches 10.5% Mel 11.5%. After processing, it will be left in the warehouse for at least 45 days before being sent to the professional cup for testing.
