About selecting defective beans
Before baking raw beans, removing "defective beans" and foreign objects is called "hand selection". Through this process, you can prevent unpleasant smells and tastes from appearing in the coffee. Remove pebbles, broken beans, immature beans, fermented beans and other foreign bodies.

This time it will be cinnamon roast (light roast). The elapsed time so far is about 10 minutes.
The net is placed about 15 centimeters from the roaster and shakes the net violently at extremely fast speed. Please don't stop shaking your hands to avoid uneven burns. The color of the bean becomes darker and darker, and if it shrinks, it becomes a gaze.
After about 15 minutes, loud sounds like "Bee, Bee" will begin to appear. This lasts about 1 minute and lasts about 2 minutes. Please shake the net violently from left to right, tighten it, and return to the top and bottom.
