This is a kind of rich fragrant coffee, it is the seed of the fruit of the coffee tree. The unique aroma and taste of coffee are made by a thermal reaction called roasting. This time we will introduce "raw beans" before the coffee is roasted.

What are coffee beans?

First, coffee beans are the seeds of coffee trees (Rubiaceae). In coffee trees, white flowers that smell like jasmine begin to bloom within two or three years as the seedlings grow.

This flower will bloom and will shrivel in a few days, but in the end I will attach an oval fruit. It is called "Coffee Cherry" from it becomes red because it is ripe and similar to cherries.

The structure of coffee beans

In the coffee cherry, the two seeds face each other. Coffee cherry from the outside to the outer skin, pulp, endothelium (parchment), silver skin, seed structure. The raw bean (rough) is to remove the outer part of the seed.

What is parchment?

Parchment is the light brown skin around the seeds wrapped in coffee fruits, also known as endothelium. Parchment is very tough, wrapped in seeds like mucous membrane. The coffee that can be made now is called parchment coffee.

What is silver skin?

When the seeds that become beans are taken from the fruit of coffee and the flesh is removed, the silver skin is the thin skin inside the seed. Because this skin looks silver, it is often called "silver skin".

The silver skin is often removed during the refining process or burned during the baking process, but some of the silver skin may be retained after baking.

The origin of coffee is amazing because it is the seed of meat. Coffee raw beans are like a thin cream color, but only add calories during baking, which is a "coffee-like" aroma and taste. In other words, raw coffee refers to the state before baking.
