Yirgacheff is located in the Gedeo region of southern Ethiopia, which is better known as Yirgacheff and Kochere. Yirgacheffe coffee is unique in flavor, style and popularity, so it is unique in product classification and has always occupied a place in the global fine coffee market. Yirgacheffe, located in Sidama province, is itself a small town, adjacent to three small producing areas Wenago, Kochere and Gelena Abaya, and Kochere is also drawn into the regional classification of Yirgacheffe because the coffee flavor is almost the same as that of Yirgacheffe. Ethiopia implemented a new trading and grading system in November 2009. In addition to Yegashefi, Wenago, Kochere and Genlena/Abaya were newly added. Yirgacheff is a very famous small producing area located in Gedeo region in southern Ethiopia. The coffee beans harvested come from local coffee farmers. It is composed of a large number of individual coffee farmers. The average cultivation area of these small farmers is about 1 hectare. The cultivation altitude is about 1,800 to 2 kilometers. The coffee varieties are mainly a mixture of Typica and Heirloom (native species). Due to its advanced processing equipment, this region has always had a high level of performance in the field of sun and water treatment, with berry and citrus complex notes clean and sweet, praised by people. The main mode of production is that small coffee farmers collect red fruits from each harvest and send them directly to the treatment yard of the neighboring cooperative for unified treatment. Water washing technology was introduced to Ethiopia in the 1970s. At present, raw beans in Yegashefi are treated by sun and water washing, but the sun treatment has a high level of quality. After screening and grading red cherry colored coffee fruits, the processing plant directly removes the floating fruit with water. After collecting the red cherry colored coffee fruits at the bottom, the green beans with shells are placed on the shelf and exposed to natural sunlight. The humidity reaches 12% or less, and they will be sent directly to the Ethiopian Commodity Exchange (ECX) warehouse in Awassa.
