There are two possible reasons I know:

After the meeting, the Australian host summed up the results and said that since the taste of coffee is not accurately described, only the clearest difference is mentioned, that is, we judge the production of espresso. They all taste espresso without sugar or milk. But this is not the way we advocate drinking coffee, but as a job, in order to test the problem of coffee production. If you add sugar or milk, it will cover the problems in coffee making. So in order to judge the fault of coffee, we can't add sugar and milk. But this is not the normal way to drink coffee. Because in life, when drinking coffee with sugar and milk, it is to cover the bad taste of coffee.
When we drink coffee in life, it all depends on our personal taste. If you want to add sugar (and / or milk), you don't have to follow any rules. The most important thing is to be comfortable with yourself.
If someone questions what you are doing, you can confidently tell him that one of the basic rules of European coffee culture is not to interfere with the way anyone drinks coffee, including sugar (or milk).
Here is one point to note: according to the standard service specifications, when serving strained coffee to customers, cafes are required to add sugar and a small can of milk, and it is up to customers to decide whether to add and how much sugar and milk to add. But if it is espresso, including espresso and fancy coffee, it is only with sugar, not with milk. This is the appropriate service specification determined by the characteristics of espresso.
