It has been very busy since we came back from Colombia. In addition to catching up with our usual baking tasks, we are also testing roasting new coffee to fill the gaps in retail and online stores. Launching new coffee is always exciting, but it can also be stressful as we try to determine the best configuration we think is suitable for each new coffee.

The first is the new relationship with Jorge Heberto VillatoroG ó mez, a Guatemalan producer. We introduced it to Jorge through Onyx Coffee's friends. In February this year, we met Jorge in the office / warehouse of Huehuetenango, who put the samples harvested this year in a cup. Jorge has a gentle demeanor. Although he has been making coffee for more than ten years, he looks very young. Jorge was born into a coffee family and grew up in coffee trees. Now he owns two farms with his families Finca Miralvalle and Finca Montecristo. He also helps manage another farm with his agricultural background. In addition to running the coffee empire, he has to take a law degree course at night school!

Jorge has participated in a number of international competitions, which have won high praise for the quality of his field. Some of Miravalle ranked 10th in this year's Cup of Excellence. The farm is located in the tropical rain forest and has a special microclimate that can mature slowly. The cold caused by altitude and local climate slows ripening, resulting in more structure and sweetness of coffee. There is a registered private nature reserve on the property they promised to take care of their land. Due to altitude and climatic conditions, Miralvalle is one of the last farms to complete the crop. So when most of Huehuetenango's coffee was harvested, Miralvalle began to harvest coffee cherries.

At Jorge's cupping lab, we taste samples from his farm, as well as other farms in the Huehuetenango area where he helps manage / export. We chose a coffee from Miralvalle because it shows the perfect balance between fruity and sweetness.

We are pleased to be able to share this new coffee as the latest single original espresso. It starts with the acidity of black fruit and the taste of black grapes and raisins. When finished, enjoy rich brown sugar sweetness and dark chocolate. This is a balanced and round coffee, suitable for black or milk.
