At that time, we were completely outsiders of coffee culture, still enjoying the sweetness and bitterness of the coffee. The next story gave me a complete epiphany, so I fell in love with boutique coffee, then what is boutique coffee? Let's start with the introduction from the factory.

The farm is located in Dala area, 1200 meters high above sea level, belonging to Linton Province, Vietnam. Anyone who knows Vietnam knows that Dalat was once one of the capitals of ** in France, and the palace of the last Vietnamese emperor Baoda was here. Coming to the Great Lat City is like Provence, France, but with Asian style blend, like the capital of art.

At present, Vietnam, as a large exporter of agricultural products, the highest quality and high-priced agricultural products almost come from the Dala region, from the natural environment and climate, whether vegetables, melons, fruits or coffee cashew nuts are more delicious than expected, so in Dalat, vegetables are usually cooked directly with all kinds of sauces to eat, and the delicacy of the ingredients is brought into full play.

As we all know, delicious ingredients do not need to be overdecorated, and the same is true of coffee. Fine coffee is usually not contaminated by milk and sugar or condensed milk, and maintaining the fullest coffee flavor and fruit flavor is worthy of the farm's meticulous cultivation.

Boutique coffee beans are harvested only one season a year, and it takes about eight months to grow, so the particles are relatively full. Because of the delicate varieties, tall betel nut trees need to be planted around the coffee trees for shade, and they are covered with green weeds. There seems to be no artificial trace.

The process of making coffee is relatively complicated, but as a four-step coffee brand, we hope to make people understand how to create a cup of delicious coffee through the promotion of the brand.

Step 1: choose the best raw coffee beans. We choose the raw beans for ourselves, and we know where the raw beans grow, what varieties are cultivated by the farmer, and how they are treated, washed or insolated. At present, our main variety is Arabica bourbon beans from a single farm, because they come from a farm, so the size of the beans is relatively uniform, the variety is relatively pure, the most important thing is that we need to manually pick out each residual bean to maintain the best flavor, which is different from the commercial beans of Starbucks and other big companies.

Step 2: it is very important to maintain a beautiful taste when fresh roasting. Usually, fine coffee is not as highly roasted as Italian coffee and produce heavy bitterness, but choose light or moderate roasting to retain the best elements of caffeine and chlorogenic acid in coffee, so fine coffee is usually sour, slightly maintain some caffeine bitterness, and pay attention to taste balance. Usually we bake and pick up the goods after the guest places the order to maintain the best freshness and taste.

Step 3: roasted coffee, after manual or machine grinding into coffee powder, now grinding and soaking is the best way to brew, we suggest that guests choose a practical manual grinder, while shaking the grinder, the rich aroma of dried coffee constantly stimulates your sense of smell. How many people are infatuated with the smell of the cafe, but do not know that the smell can be done by themselves. Adjust the particle size of the powder will also have a different taste, so more personalized taste choices.

Step 4: finally, it is brewed. At present, boutique coffee can be brewed in many ways, such as Japanese hand brewing, French pot brewing, American style, mocha pot, siphon and so on. These tools are free to choose, and the taste is also slightly different. At that time, the secret of delicious coffee lies in the control of water temperature. Baristas in boutique cafes usually use thermometers to measure to keep the best 85C. But ordinary household brewing remember not to use freshly boiled water, you can cool or add some pure water, so the coffee taste is very good.
