The literary atmosphere of Shanghai at the weekend is half in the exhibition hall and half in the coffee shop. When it comes to coffee shops in Shanghai, the momentum of development in recent years is obvious to all. Both local boutique cafes and branches of foreign coffee shops have earned enough popularity and feelings. Gradually, people are no longer satisfied with instant coffee, but turn to more professional boutique coffee research: where do the beans used in this coffee come from? What is the composition of the aroma of coffee? Are there any interesting ideas in the baking process? This series of investigation has brought the fine coffee culture to the ground in Shanghai and brought a brand-new coffee trend.

Coffee beans are of course important to make a good cup of boutique coffee. For example,% Arabica, who arrived in Shanghai not long ago, high-quality coffee beans bring real boutique coffee. It is said that the founder has a coffee farm in Hawaii, and his own beans are naturally strictly guarded.

Good coffee beans make fine coffee.

What kind of coffee beans can be regarded as good coffee beans? Recently, I had the opportunity to interview Jaime Duque, a master roaster and coffee grower of FACT.COFFEE 's exclusive coffee. "good coffee beans are very pure, and the single variety of coffee beans we are talking about is specific to a single farm, and each of our beans is the only coffee trees that come from the same piece of land on the same farm, so it is the original taste of beans that can really be done," he said. Normally, he would go to see the coffee farm in person and maintain a friend relationship with the bean farmers. "only by really knowing the coffee beans and communicating with the coffee growers at zero distance can we really drink the coffee from the fresh picking on the farm and go directly to your office cup."

For example, not long ago, FACT.COFFEE released a new limited edition of black cans-F.02 LA RIVERA GEISHA Rose Summer. Beans grow on the Columbia Rivera Farm at an altitude of 1700 meters. Pure manual picking and natural sun exposure ensure the quality of raw beans. Jaime Duque has customized its own baking curve for this rose through repeated tests to give it a clean and round taste. Mellow and silky chocolate aromas, sweet fruit aromas of apples and pears, and floral aromas of jasmine and honeysuckle surprise Colombian coffee.

Coffee data map to bring you a new understanding of coffee

For boutique coffee, in addition to good coffee beans, there are many details worthy of attention. FACT.BOOK, an atlas of coffee culture released by FACT.COFFEE, records images of the rapid development of coffee culture in China, using concise figures to tell us details that are not well known.

When making coffee, the temperature of the water should be controlled between 91 ℃ and 94 ℃

The perfect temperature for coffee tasting is 65 ℃ to 75 ℃.

Global coffee production is expected to decline by 50% by 2050 because of the climate.

Dialogue coffee master, fall in love with coffee trend

"take every coffee grower seriously and be grateful to them, and their reward is to give coffee lovers the best coffee beans." for Jaime Duque, the coffee industry is like a big family, and when everyone is willing to do something for a good cup of coffee, the coffee trend naturally forms. What is the coffee trend in the eyes of the coffee master? Let's hear it.
