With the elevation getting higher and higher, the temperature dropped very significantly, while the cold and cool temperature and the protection of shade trees also provided a very good environment for growing coffee trees.
In addition to the strict maintenance of the manor environment, Wilford has also experimented with quite a variety of sun exposure methods. This batch is a micro batch made of African scaffolding sun. In the stage of sun drying, Wilford requires workers to carefully pick out defective beans that are not good enough. In addition, Alida Manor is also divided very carefully in batches, and each batch of red fruit harvested from the manor will be filled with a different number. It is convenient to track the batch quality and flavor level in the subsequent cup testing stage, and the raw beans purchased by Shoucheng Coffee are introduced to the selected batches of the manor with excellent flavor.
After the first introduction of the famous Manor Elida in Panama in 2012, we selected three batches out of 36 batches together with the owner Wilford! After it was introduced to Taiwan, we carried out cryogenic storage for as long as 6 months, especially in January 2014!
Master George Howell began to advocate the concept of low-temperature storage of raw beans in 2006, but the concept of low-temperature resting was jointly tested by several international friends of the Baking Bean Alliance (referring to JRN in Japan).
