Preparation phase:

Step 1

Prepare a pot of hot water about 90 degrees C, the amount of water is about 400ml.

Step 2

Fold the CHEMEX special filter paper, lay it flat above the funnel of the coffee pot, wet the filter paper and the coffee pot with hot water to remove the pulp smell of the filter paper and warm the cup at the same time.

Step 3

Fresh coffee beans are now ground into powder, with a grinding scale of about medium grinding and about the size of fine granulated sugar.

Step 4

Pour the ground coffee powder into the funnel of the filter paper and pat it on the table to make the powder smooth and dense.

Cooking stage:

Step 1

For the first time, the water of 30ml is injected from the center of the coffee powder layer, and then steamed for about 30 seconds, at this time the coffee powder will absorb water and expand into a hill.

Step 2

Direct injection of water in a vertical circle, the amount of water injected into 18 grams of coffee beans is about 210ml, and the amount of water injected can be increased or decreased according to individual preferred concentration.

Note: the difference between CHEMEX and hand brewing pot is that the coffee powder layer of CHEMEX is deeper, and the brewing method needs to be adjusted. In the process of brewing, take the center as the cooking range as far as possible, let the boiling water stir the coffee powder, and let the coffee powder be extracted evenly.

Step 3

After filling the water to the required capacity, wait for the water in the filter paper to flow completely into the lower coffee pot, and finally take the filter paper and shake the bottle to make the coffee after extraction uniform.

Pour into the cup and you can enjoy the coffee with clear features and no miscellaneous flavor.

Note: CHEMEX filter paper is thicker than ordinary filter paper, which is suitable for brewing deep-roasted coffee and can remove the fuel consumption flavor of deep-roasted coffee.

The longer the coffee powder is soaked in water, the thicker the coffee powder should be ground. For example, the coffee powder in the French filter pressure pot has longer contact with hot water than the mocha pot, so the coffee powder should be thicker.

Point 3 suitable temperature of cooking water

Coffee is suitable for brewing at a temperature of about 88-92 degrees. The higher the temperature is, the easier it is to extract the aroma of coffee, but it is also easy to extract bitter woody flavor, so when the extracted coffee has a bitter taste, you might as well lower the temperature of the brewed water and try again.

Point 4 stir appropriately

More coffee aromas can be extracted by stirring properly, but don't stir too much and extract too much.

In addition, the lighter roasted coffee beans are not easy to extract because of their compact structure, so they can be cooked in more stringent ways, such as higher cooking temperature, higher extraction pressure (9 atmospheric pressure of Italian coffee machine) and fine grinding.
