Although "Dutch coffee" is often called Dutch coffee, the exact name should be cold water brewed coffee (cold coffee), also known as water drip (water drop coffee). Legend has it that it was invented by the Dutch crew, but there is no specific historical evidence. However, because Indonesia was once a colony of the Netherlands, and Indonesian coffee is bitter and strong, it will be extracted with relatively less hot water. Compared with this historical fact, I think there may be some origin between the two.

Iced coffee extract.

This method of extraction, as the name suggests, is a way of injecting cold water into coffee to extract. The dissolution process of coffee ingredients is slightly different from that of hot water extraction, so you can enjoy an alternative flavor. Unlike when extracted with hot water, fat-soluble ingredients are not dissolved when cold water is injected, so the finished product tastes cleaner and is even compared to wine-like coffee.

Although it is famous for its decaf, it is loved by people who are sensitive to caffeine. But even if caffeine dissolves slowly in cold water due to a decrease in solubility, it is not completely insoluble. On the contrary, because it is extracted for a very long time, the caffeine will be fully dissolved, and the caffeine content may be more than the average coffee.

Ice drop Dutch coffee.

There are two common ways of Dutch coffee, one is ice drop type: the water is put into the equipment, let the water drop drop by drop, the water will slowly seep through the coffee powder, and then drop into the lower glass pot; the other is to add coffee to the water. ice brew that soaks it out. Ice brewing can not get more than a certain concentration of coffee because there is coffee in the water. Ice drop is a continuous supply of fresh water, so the ingredients of coffee will continue to dissolve out, resulting in stronger coffee than ice-brewed coffee.

However, if the ice drop uses utensils that are not completely sterilized, or if the hygiene management is negligent in the preparation process, it may be infected by general bacteria such as E. coli. And most of the extraction equipment is also exposed to the air, so it may also be contaminated by dust. Therefore, it is better to extract in a completely sealed special space. Extraction in places where there are no cold storage facilities is unhygienic and dangerous, so it is better not to extract outside winter.

In the case of ice brewing, the water is mixed with coffee and refrigerated in the refrigerator for 12 to 24 hours, and then filtered with filter paper, which is relatively safe because it is kept refrigerated. Don't put it too long after extraction, drink it as soon as possible, in order to prevent the danger of bacterial increment.

Use ice drop to make Dutch coffee

Recently, there are many moderate-sized household ice-drop coffee equipment on the market, and we will use this equipment for ice-drop extraction. Since most of the extracted coffee liquid is very strong, it can be mixed with the right amount of water or milk.

1. Prepare to grind 80g coffee powder and 600ml water a little thicker than granulated sugar. Fill the coffee powder into the middle coffee canister (middle pot) and press it slightly so that the coffee will not splash when it is wet by water droplets.

two。 At the initial stage of extraction, the coffee should be evenly wet so that the water will not tilt to one side. Use room temperature water when wet coffee, once injected with 20~30ml water to let the coffee absorb.

3. After the coffee is wet, adjust the outlet valve so that the water droplets drop at a rate of 1 to 2 drops per second for extraction. The overall extraction time is 8: 10 hours. It is necessary to pay attention to the extraction occasionally, so that the coffee will not accumulate a layer of water on it because the water is dripping too fast, and the water on the coffee may produce a bad bitter taste. After the extraction, quickly put the coffee into a sterilized container and store it in the refrigerator.
