What's the difference between Rose Xia and Ye Jia Xuefei Coffee beans? description of flavor and taste characteristics of Rosa hand coffee
In the coffee shops in Qianjie, there are often some friends who come and ask, is there any coffee with a prominent fragrance of flowers?
The baristas of Qianjie Coffee are usually the first to choose Rose Summer, because it is full of flowers, full of sour fruit, and attractive, even after drinking it for hours, even the baristas of Qianjie Coffee can not extricate themselves from it.
But there are also some friends who struggle and always choose the work of many coffee lovers-Yejia Xuefei. This is not bad, after all, Rose Xia and Ye Jia Xuefei have their own characteristics.
Baristas on the front street generally advise those who have just come into contact with boutique coffee not to taste rose summer, because the flavor of rose summer coffee is indeed too prominent and attractive, and try rose summer without tasting coffee from other producing areas. this is extremely unfair to coffee beans in other producing areas.
Ethiopia
As we all know, Ethiopia is the birthplace of Arabica coffee. In Ethiopia alone, more than 5,000 varieties of coffee beans have been found in the forests of the Kafa region in the south, coupled with the protection of their species by the local government, so most of the coffee produced in Ethiopia is sold as "native species".
Qianjie has learned that many friends who like beans from Ethiopia are fond of its rising and clean acidity. But you should know that coffee as a crop, its flavor is determined by not only seven percent of the genes, but also one-third of the environment.
Ethiopian coffee beans are mainly divided into nine producing areas: Yega Sheffield, Sidamo, Lim, Hara, Jinma, Iruba, Kinby and Lekanti, Tibbi and Bebeca, Lake Tana.
Since this article needs to make a distinction between Rosa and Yegashafi, Qianjie will only talk about the Yegashafi producing area in Ethiopia.
[Yega Sheffield]
Yegashafi is a small town in Sidamo Province, which used to be a by-product area of Sidamo, but because of the unique flavor of coffee beans produced in the Yegashafi region, Ethiopian farmers are proud of their coffee beans with "Yejashafi flavor" and are later separated out separately.
The so-called Yega Chuefei coffee flavor refers to the strong aroma of white flowers, lemon, peach, almond and tea. Baristas on Qianjie Coffee will describe it as "flowers in full bloom".
In the post-processing of raw coffee beans, the oldest traditional treatment of Yega Xuefei is the sun treatment. But in 1972, Ethiopia introduced Central and South American washing technology to improve the quality of coffee, which made the jasmine and citrus aromas of Yega Xuefei clearer and brighter. Qianjie Coffee believes that water washing is the most essential difference between washing and tanning. Water washing is the most basic flavor of coffee, which can most directly reflect the special flavor of the producing area, while tanning will add sweet aroma and fermentation to this basic flavor.
Qianjie Coffee this kind of red cherry coffee is the sun bean from the Yega Sheffield area.

Panama
When it comes to rose coffee, we must talk about Panama. Although the rose summer coffee variety is found in the rose summer forest of Ethiopia, the rose summer in the village of Ethiopia is very different from that in Panama.
After being sent to the Kenya Coffee Institute, Rosa coffee beans were introduced to Uganda and Tanzania in 1936, Costa Rica in 1953 and Panama in 1970. After more than three decades of keeping a low profile in Panama, the Panamanian Emerald Manor, also known as Panama Geisha Hacienda La Esmeralda, separated it from other varieties in 2003 and became the champion of the BOP competition in 2004. The rose summer coffee variety also became famous.
The Emerald Manor in Panama is not only the discoverer of the rose summer coffee variety, but also the promoter of the rose summer coffee.
[division of the Jade Manor in Panama]
Emerald Manor is located in the Pokuit producing area of Panama, which is an important coffee producing area in Panama, and many familiar coffee estates come from this area, such as Alida Manor, Catova Manor and so on. The jadeite manor is finely divided into three plots: Jaramillo, Caas Verdes and El Velo. Each piece of land will be refined to small plots again.
High-quality Rosa rugosa is mainly produced in two plots: Jaramillo and Caas Verdess.
[Panamanian Jade Manor Rose Summer hierarchy]
Friends who have been to the Qianjie coffee shop can see from the small blackboard at our bar that the jade estate under the Panamanian district is divided into red mark, green mark and blue mark.
Red mark
The rosy summer of the specially selected jadeite is often called the red mark. Rosa coffee beans, which are planted at 1600-1800 meters above sea level and with a cup test score of more than 90 points, are produced in the two producing areas of Jaramillo and Ca ñ as Verdess. The independent bidding held by the Jade Manor itself, in the divided plots, the Rose Summer batch that was put forward for bidding is the red bid. This grade of rose summer is treated in the sun or water, with special, bright floral and citrus aromas.
Green label
Private collection, commonly known as green standard, is not a batch of independent competitions, planting rose summer varieties that do not participate in bidding but are still of excellent quality. Micro-batch mixed beans from different plots such as Jaramillo and Caas Verdess were planted at 1600-1800 meters above sea level. Due to the use of mixed bean mode, there is no detailed indication on the plot, so sometimes the flavor similarity between green mark and red mark is very high, but the next production may be different. It is worth noting that although the green standard is not as high as the red standard, its typical rose summer flavor is still rich.
Blue mark
Rose summer 1500 this brand is our common blue standard rose summer. Select mixed beans from three different plots, namely, Jaramillo, Caas Verdess and El Velo, which are 1400-1500 meters above sea level. In previous years, the blue standard rose summer only washing treatment, 2020 blue standard batch added the sun treatment method. But in 2021, in order to maintain the brand image, the Jade Manor cancelled the blue standard, which means that the blue standard is out of print!

After the red mark famine of Qianjie Coffee in April 2021, the red label rose summer coffee beans of the 21-year new production season arrived on June 3 of the same year. The red mark came from the Mario plot of the Jade Manor, which belongs to the famous Jaramillo of the Jade Manor. The Jadeite Manor in 2004 also became famous by virtue of the rosy summer of this plot.
Flavor difference
[red cherry] smells of ginger flowers, the sweet and sour taste spreads slowly in the mouth after the entrance, the overall taste is floral, and the aftertaste is sweet and juicy. When the temperature drops, the acidity rises and the sweetness lasts relatively long.
Taste the flavors of citrus, berries, honey and grapes. With the decrease of temperature, the sweetness of honey is particularly obvious, accompanied by the aroma of ginger flowers.
