In 2014, The Coffee Collective in Copenhagen found an organic coffee (organic) in Ethiopia, which was in the sun. Since then they began to wonder if they could find a washed organic coffee. At the beginning of last year, they tested a batch of organic coffee samples from Bolivia, and they were very amazing. They wondered how such delicious coffee could be grown organically. So at the end of last year, they paid a personal visit to the Bolivian farm that produced the coffee, Haojing Manor.
Finca Buena Vista, close to the city of Caranavi, has a washing plant and a shelling plant to handle fresh coffee fruits from nearby coffee farmers. After blindly testing all the different batches of coffee bought by the estate from nearby, they found that organic almost overwhelmed non-organic, sweeter, cleaner and more acidic.
The owner of Haojing is Rodrigues, whose family is at the heart of the development of Bolivian boutique coffee and a bastion of high-quality coffee. They will teach farmers how to fight diseases and insect pests, how to increase production and improve quality. This organic coffee was harvested by 10 coffee farmers in Copacabana from August to September 2016. The 10 small farms sent the harvested fruit to the washing plant set up by Hauvignon Manor, peeled, fermented and washed, and the process was very careful. Due to the excellent quality of coffee, the purchase price of The Coffee Collective exceeds the market price by 146%. The roasting degree of this coffee is light and medium to achieve a balanced flavor.
