Finca Santa Felisa, a famous organic coffee garden in Guatemala, was founded by Trinidad E. Cruz was founded in 1904 in Maya Kakchiquel district of Actiran, and has lived peacefully with Maya people for 100 years. Cruz family is honest and kind to aborigines. Up to now, Maya Kakchiquel people still serve their family in the estate, and Cruz family has entered the fourth generation. Among the estates I visited, only Anabella introduced all the workers to the buyer one by one. When she introduced them, she explained the work they did and listed their outstanding places! The process is warm and touching. These people are really respectable orchard and hard workers in the processing field! Most coffee growers will only introduce the plant manager or fruit harvesting foreman to visitors.

Anabella told me,"I'm proud of my colleagues! Not only did they collect the ripe fruit diligently, but they also handled the post-processing very well!"

In 2013, after four rounds of cup testing, I decided to introduce the four treatments of Santa Felicia Manor. I asked the two brothers and sisters why they had to carry out multiple treatments.

Acatenango became Guatemala's eighth coffee-producing region in 2007, and we translate it as "Acatenango Valley." This area is located in Chimaltenango province of Guatemala. More than 5000 hectares of coffee plantations are fertile volcanic, mainly located in two volcanic mountains, and almost all of them have forests and shade trees. As can be seen from the photos above, almost all of the plantations are planted in shade, and the main varieties are bourbon and some Catuai and Caturra. Acatenango is the third highest volcano in Central America, and beyond Fuego lies Lake Atlantis.

Annual rainfall ranges from 48 to 72 inches, average annual temperatures range from 14 to 31 degrees C, and the temperature difference is large enough that the beans are dense and contribute to flavor. The coffee harvest season is mainly from mid January to March. At present, Kaqchiquels still live in this area and maintain traditional farming methods, while Santa Felicia Manor maintains good relations with Kaqchiquels and treats them well, so the farm farming is in charge of this tribe and gets along well with them. The region has about 4,000 farmers, coffee cultivation dates back to 1880, and Santa Felicia Manor was opened in 1907, plus the estate is located at a higher altitude, is also a pioneer of Accadillac.
