The so-called "dried grape honey treatment" is not the invention of black gold, this method suddenly became popular, mainly from the 2017 Brazilian extraordinary Cup (Cup of Excellence), champion Gabriel Alves Nunes said his yellow bourbon used "raisin treatment" (Raisin process). Not only did he win the championship, the international judges gave him a high score of 92.33, and the bidding price was $124.5 per pound, breaking the historical record, so the whole world was impressed by this method.

In fact, raisin treatment is not uncommon in Brazil. When fresh fruit is hung on a tree because it is too late to harvest, resulting in overripe, the skin will form wrinkles and the color changes to purple, so it is called "raisin". After the overripe fruit is picked, it floats with other unripe beans in the sink to become "floating beans", which is usually called secondary beans and becomes a cheaper batch. At this time, if the overripe raisins are peeled and then treated with honey in the sun, it is possible to improve the quality of overripe beans in Brazil, which is mechanically harvested.

Whether it is because the fresh fruit is overripe on the tree, the fermentation process has been started, or it is squeezed into a bucket after picking and begins to ferment, this anaerobic fermentation process is not available in general honey treatment or dried grape honey treatment.

Raisin treatment is not unique to Brazil. In Costa Rica, it is called "dried grape honey treatment" (raisin honey). The general practice is to leave the fresh fruit on the sun bed overnight without peeling after harvest, then soak in water and then peel it for normal honey treatment (whether it is black honey, red honey or yellow honey). Leaving fresh fruit overnight does not look like raisins like overripe fruit dried on a tree, but farmers in Costa Rica follow the Brazilian name and are treated differently from orthodox honey.
