Of course, there are also inexplicable ones. This is still a hobby of the store. Fortunately, most stores will specify that this is a hand-brewed coffee blend, and some will indicate which individual coffee combinations are made.

Generally, it is still called comprehensive beans. After all, when this formula was developed, it was still treated as three independent works with different flavors, and the three beans were mixed and baked in different proportions to stack different flavors. Therefore, it is more appropriate to call it comprehensive beans.

The most common examples are so-called "Blue Mountain" coffee,"Civet" coffee, and "Old Pit" coffee, which are products with flavor names that often don't have a single Blue Mountain in the entire bag of coffee beans, just a patchwork of other coffees: the imaginary Blue Mountain flavor. Of course, it may also be mixed with a little coffee beans of origin, such as the ancient pit coffee sold on the market. The whole bag of beans often does not exceed 10% of the ancient pit, and a large number of beans from other origins are used to make up the number.

4. Taste Challenge Composition:

If a boutique coffee shop has the ability to prepare hand-brewed mixed coffee beans, sometimes it will prepare several mixed beans with different flavors, which will make the drinks of the store more varied.

From the moisture content point of view, the same washed 2 beans are relatively close, and the bean quality is soft, but the relatively large particles of Yunnan and the harder but smaller particles of Kocher are also close in heat conduction, mixed baking of these 2 beans is not easy to cause uneven baking; and we use the step-by-step reduction of the fire baking method, after dehydration and homogenization, there is a longer Mena reaction time so that the 2 beans tend to develop more synchronously.

In the determination of roasting degree, we also adopted "take the middle value". Such development time and lower bean temperature not only effectively removed the sour taste and excessive herbal flavor of Yunnan coffee, but also well retained the flower and fruit fragrance of Yejia.

In terms of proportion, we chose Huaguoshan for the first time: Kocher-6:4 ratio, cup test results: cleanliness is good, sweet, apple fragrance, plum acid, orange aftertaste. The overall impression is that the taste is good, but the flavor is slightly thin.

Therefore, after a cup test discussion, we decided to add a flavor enhancement bean-[Rose Summer Village Rose Summer] sun, this time using the ratio of Huaguoshan: Kocher: Rose Summer-6: 3:1.

Reducing the proportion of Kocher makes the acidity of the whole bean softer than before, and 10% of Guixia Village brings more fruity flavor, but also enhances the floral and later tea aroma.

In order to retain more flower and fruit aroma, the baking temperature will be reduced a little; the time from dehydration to first explosion will be shortened slightly, and more reactive substances will be retained and the development time of first explosion will be increased.
