Balu Volcano-Morgan Manor-the flavor and cooking of washed green roses in the Walken region of Panama?
Panamanian Coffee Manor-Morgan Manor is close to the Zericki volcano, 1600-1800 meters above sea level, located on the steep slope west of the Baru volcano, with lush rainforests and picturesque waterfalls. It has been growing coffee for eight years and is run by Jamison, the owner of Finca Deborah in Panama. The total area is about 15 hectares, with about 2000 coffee trees planted per hectare. The two wooden houses are located on both sides of the stream in the valley, the clear stream flows from north to south, century-old trees can be seen everywhere, the scenery is picturesque, and the original trees are well preserved.
Coffee trees are planted on steep slopes on both sides and are not easy to harvest. Morgan Manor adopts pure natural organic planting, and the proportion of fertilizer will be adjusted according to the soil condition and the nutritional needs of coffee trees. When a coffee tree is hit by pests or gets sick, the whole tree is removed and the soil is renovated to isolate pests and protect other coffee trees. Jamison, the owner of the manor, said that in order to avoid polluting the water source and natural ecology here, the coffee will be sent to other places for treatment and drying after harvest. Geisha coffee beans love a cool environment, with an average of 40% sunshine a day. On the other hand, the staff often inspect the manor to keep the geisha coffee tree shade and sunlight in the right proportion.
Hong Kong Zhao Jiabao, the world WBC runner-up, returned to participate in the Hong Kong HKBC in 2017 and chose Rose Summer from Morgan Manor in Panama to win the championship again to participate in the 2016 World WBC Competition.
Not surprisingly, the Panamanian Coffee Manor-Morgan is the sister estate of the famous Finca Deborah. The rosy summer of Deborah Manor won the limelight at the World Cooking Competition (World Brewers Cup) in 2017 this year! In addition to Australia's ONA Coffee bean baker Sam Corra with a special treatment of Deborah won the world runner-up, only 2.14 points lost to Wang ce, in the top 15 winners, a total of 7 contestants used Deborah! There is no manor in the world, including the Rose Summer Manor in Ninety Plus, which can be matched! After Wu Zelin won the 2016 World Coffee Masters (WBC) with Deborah last year, Morgan and Deborah became the hottest coffee.
Panamanian Coffee Manor-the owner of Morgan Manor and Deborah, Jamison Savage (Jamison Savage), is of American origin. For the past 10 years, he has been bent on building his ideal coffee farm in Panama. At first, everyone thought it was impossible. The site was almost covered by primeval forest, with an elevation of 1950 meters, making it the highest and most independent coffee farm in Panama. According to the experience of local farmers, you can't grow good coffee at such a high altitude in Panama.
But Jamison was unimpressed. Since 2007, he has been planning the infrastructure of the entire estate. In 2010, he began to plant the first rose summer at an altitude of more than 1900 Michael, with the first small harvest in 2015 and the official commercial harvest in 2016. In the process of creating the manor, he strives to maintain a balanced ecosystem and has devoted himself to preserving most of the tree species and plants from the beginning of growing coffee. As a result, it is now seen from the four glass windows of the house on the manor. It is a breathtaking view of the tropical rain forest, and the whole house is powered by solar energy. The manor is shrouded in clouds all the year round and the temperature is so low that there is no need to use herbicides at all.
Morgan Manor is located in Volc á n, Chiriqui. Located in the steep western foothills of Volc á n Baru, surrounded by lush rainforests and waterfalls, with a total area of 15 hectares, planting 2000 coffee trees per hectare, two clear rivers from north to south, you can see more than 100-year-old trees everywhere, the scenery is extremely beautiful, and the manor tries its best to protect these primeval forests.
Rose trees grow best in cool conditions and need only 40% of the sun every day, and farm staff often look around to ensure the ratio of shade to sunlight. Morgan uses natural and organic planting methods to adjust fertilizers according to the condition of the soil and the nutrient needs of tree species. When a coffee disease is found, the whole infected coffee tree will be uprooted and removed immediately to avoid infecting other plants. In order to keep the environment and water of the manor from pollution, they sent the cherries to other places for processing.
The rose summer produced by Jamison has complex levels and various flavors, which is very suitable for hand flushing. This rose summer is a rose summer with green leaves, growing on both sides of a very mountain, so it is not easy to take care of and harvest. The lower temperature, coupled with dense shade trees, slow the ripening of coffee cherries, resulting in the development of excellent acidity.
