COE is a boutique coffee competition mode, the full name is Cup Of Excellence, is a boutique coffee competition system commonly used by 10 major coffee producing countries in the world. Coffee farmers who can be selected as the winners of the COE will not only recognize the excellent quality of their coffee, but also earn a lot of money from the auction. This evaluation system was adopted by coffee production groups in Brazil in 1999 and is now widely used in Colombia, Guatemala, Panama, Costa Rica and Nicaragua.

In 1999, "Coffee Excellence" was founded by a Ms. Susie Spindler, headquartered in Portland, USA. The English name of "Coffee Excellence" is The Alliance for Coffee Excellence, or ACE. ACE is a legally registered non-profit organization that hosts COE events to improve the quality of coffee grown and harvested by farmers. International evaluation stage
