No Cuban coffee, no Cuban food. Cubano, an elaborate cafe, has a thick layer of sweet cream floating over the espresso. To get the right crema, stir in 1 tablespoon espresso with sugar until foamy, then pour espresso over top. Lourdes Castro says you can't over-squeeze the crema, so stir it energetically.
You can taste Cuban coffee using a finely ground, nearly powdered coffee. Cuban-style coffee can also be widely used in whole bean and espresso blends. Cubans enjoy their coffee with lots of sugar. I've added sugar to this coffee recipe because of how it's usually made, but if you want to omit sugar, that's fine.
Mocha pot operation process
Unscrew the espresso machine and remove the metal filter cup from the bottom half. Pour ice-cold water into the bottom of the espresso machine until it reaches the bolt located inside.
Remove pan, remove filter and fill with water
Place the metal filter cup back in the bottom half and tighten with coffee grounds, flattening at the top. Screw the espresso machine together and place it on a hot burner (high temperature). While keeping a close eye on the mocha pot, take a metal cup and pour about a teaspoon into each tacita.
A mocha pot makes four tacitas, but they are only two (for lonely Cuban bachelors) and up to eight and more (for Noche Buena -family Christmas Eve dinner). As the first drop of coffee permeate, pour enough sugar to moisten the metal cup. Mix the moist sugar and coffee vigorously until it becomes light and mushy.
In the meantime, heat the mocha pot once the top is about 3/4 full. This prevents it from burning and/or spilling onto the stove. When the coffee is finished, pour it slowly into a metal cup while gently mixing it with the sugar paste. If done properly (and yes, it does require practice and special touches), the syrup creates a "foam" once mixed with the rest of the coffee.
When the coffee is ready, you can start adding milk.
Heat the milk in a pan. Cafe con leche is usually made with whole milk or a mixture of whole milk and evaporated milk. Pour the hot milk into the cup and almost pour it into the cup. Throw in a tacita of the cafe Cuba and sensational.
