Jensen Manor

Emerald Manor

Located in Boquete, east of Baru volcano, it is the oldest and most famous producing area in Panama, located on the east side of Baru volcano, plateau with an altitude of about 1200-2000 meters. Volcan Baru National Park is a national ecological conservation area, rich in biodiversity, with seven micro-climates, covered in mist all year round, abundant rainfall, naturally forming excellent coffee cultivation conditions, so that the coffee produced in the Poquet region has a unique aroma, which is Panama's most productive and best quality coffee production area.

After many years of experiments, it has been found that the rose summer beans harvested from coffee trees growing at an altitude of more than 1400 meters can show the special flavor of rose summer beans. Therefore, the main classification is based on planting height, supplemented by actual cup test results, and the "red, green and blue" grades of rose summer beans are divided.

The coffee beans picked are called "cow red coffee cherries", which are particularly sweet. The coffee cherries are processed by a dedicated processing plant, and efforts are also made in roasting, so as to improve the reference of cup test results.

Second best-Green label [collection batch], planted at an altitude of 1600- 1800 meters, from Jaramillo, Quiel, Cañas Verdes three different estates of mixed beans, although not the highest bidding beans, this grade of rose beans still has the classic flavor of rose coffee beans, floral, fruity, citrus aromatic acid, thick and juicy taste, select the most mature coffee fruit to create a strong sweet, bright acid, delicious flavor.

[Solarization]

The harvested coffee fruit is poured into a large tank. The ripe and full fruit will sink to the bottom and remove the floating beans. Put the whole coffee fruit with skin and belt on the bean drying field to dry naturally to about 12% moisture content. It takes about two to four weeks. Finally, a hulling machine knocks off the dry, hard rind, pulp and sheepskin layers, and the green beans emerge.

The rose summer geisha is distinguished by its distinct floral and citrus flavours, high cleanliness, soft and elegant acidity, long lasting soft sweetness and a taste of premium black tea. Floral aromas and intense sweetness of tropical fruits, unique floral aromas. Jason Manor:

Green beans have a very beautiful blue-green, rose summer green beans are relatively slender, pointed at both ends. It smells of fresh grass, peach, fresh berry, light wine, vanilla ice cream and oolong tea.

This coffee has larger particles and higher density, and it absorbs more heat during the roasting process. The Mena reaction process is also faster. In the first batch of roasting, the temperature of my beans was higher than 200 degrees, and I kept applying heat until the coffee beans dehydrated and turned yellow. The dehydration time was relatively long, and the color of the green beans turned yellow. The sample smelled of grain and toast. The heating rate was 6-8 degrees every 30 seconds to ensure that there was enough heat to last until the end of roasting.

Emerald Red Label:

This is a micro-batch of porton ES-N-5, sun-cured, high-hardness, high-density beans, which are full in shape, medium in particle size, thick and long in body, and pointed at both ends.

After a burst should not be too high temperature rise, rose summer two sharp, easy to have black focus, temperature rise below 6 degrees will be better.

Emerald green label:

What we got was 1600-1800 meters of hardness and high density of 18-year-old seasonal green standard rose summer, full shape, thick and long bean body, both ends pointed.

The difference is, Jason rose summer in dehydration time, a burst point and the next bean time are longer than emerald rose summer, why?

Jensen's grains are larger, the flesh is thicker, and the time for temperature to pass into the bean core will be prolonged. Water because of the absorption of heat beans, and will slowly evaporate from the beans to the outside, when the water evaporation is too fast, it is easy to cause the beans are not ripe, beans are easy to bitter, and when the water evaporation is too slow, it will cause coffee taste bland, aroma is not rich.

When the steaming is over, the coffee beans will quickly change from white to yellow and light brown, and continue to absorb heat to reach an explosion. The expansion during steaming will change into shrinkage and dehydration. Because hard beans are hotter than soft beans, and the evaporation of water is also poor, once the heat is insufficient during baking, it is easy to be half-cooked, and the surface wrinkles after the first explosion are difficult for hard beans to stretch than soft beans.

With the increase of Menard reaction and caramelization reaction time, there are fresh floral and fruity aromas to a deeper floral aroma, followed by more nutty, vanilla, creamy and caramel tones. Proper reaction times result in lighter taste, less complexity and brighter tonality. There is sufficient development time, so that Jason can show fresh fruit sour fragrance, fermented wine aroma, retain its original flavor characteristics.

Too short reaction time may make coffee flavor too green and monotonous or even almost no flavor, similar to seeds, immature fruit taste, sharp acid, excessive astringency, no texture taste. Too long reaction time, may make coffee tonality too low, sour texture more serious, not clean or swallowed mouth has a "dry" feeling.

[Flavor Comparison]

Jensen Manor: Distinct lemon and citrus aromas, with mouth-watering fruit aromas, apple, rose, dark chocolate fruit, pomegranate, ripe grape, peach and dark berry flavors, multi-layered sour and sweet.

Emerald Red Label: Delicate and soft acidity on the palate, a sweet sensation soon appears on the tongue and lasts for a long time. It tastes clean and translucent, like black tea. Rose, honeysuckle, sweet potato, grapefruit, lemon, black tea, sucrose aroma, clear layers, long finish.

Emerald green label: rich flavor layers, the mouth burst of flowers, strawberry fruit and intense but soft citrus citric acid. Flavors vary with temperature, from jasmine, citrus to berry, honeysuckle, finally to fruit sugar, oolong tea, finally Hami melon aftertaste, peach sweetness, honey aroma, fresh and comfortable, bright and balanced, aroma layer is very strong, fruit sweetness and strong sweetness.
