What is coffee extraction? What happened during the extraction process? With regard to coffee extraction, there is still a lot that we have not fully understood. Today, I will share with you my experimental experience and experience in the past few weeks, hoping to help you deepen your understanding of coffee extraction.

What we already know about extraction

We all know that water is a very strong solution and can even be called a "universal solution" because it can dissolve many substances that other liquids cannot dissolve. As we all know, the molecular structure of water is made up of hydrogen and oxygen atoms with positive and negative polarity, so other molecules can easily decompose and combine with water molecules after entering water. On this basis, the extra heat makes the molecules move more violently, which makes the hot water more capable of dissolving other substances.

Dripping type

Filter paper dripping is the most typical brewing method, and it is also the one we use most frequently at home.

Extraction usage: very simple, just put the filter paper on the coffee filter cup, brew it and then pour out the residue in the filter paper.

French pressure kettle

The French pressure kettle is composed of a cylindrical container and a shaft metal filter that separates coffee powder from water.

Extraction usage: pour the ground coffee into the coffee pot, add hot water, squeeze the filter after a while, and then filter the coffee from the bottom of the container. The method of operation is also very simple!

Coffee thickness: coarse powder
