The summer heat in July and August makes people lose their appetite. Now I just want to have a cold drink to relieve the heat. If you love coffee, do you know there is another way to drink cold coffee besides ice cubes?
This special brewing method is called "ice brewed coffee" (Cold Brew Coffee) or "cold coffee". With simple equipment, you can have a cool cup at home!
What is iced coffee?
Unlike coffee brewed in hot water, iced coffee is made by soaking coffee powder in cold water in a certain proportion, placing it in the refrigerator for several hours, and then filtering and extracting it. Because of its special brewing process, it will taste different from ordinary iced coffee made with ice cubes, less bitter, more intense, and with a little alcohol fermentation.
Iced Coffee History
As long as it is the use of cold water to soak coffee powder to extract coffee liquid production methods, are called Dutch coffee (Dutch Coffee), so cold brew coffee (Cold Brew Coffee) and ice drop coffee (Cold Drip Coffee) are Dutch coffee. This brewing method is said to have been invented in the early 18th century by Dutch traders trading in Batavia, Indonesia.
Coffee was introduced to Batavia, Indonesia, by Dutch traders around 1699 AD. In addition to their desire to make substantial economic profits by growing coffee in large quantities in their colonies, the Dutch themselves were fascinated by the drink. Because hot water brewed coffee contains a lot of oil, which is not conducive to the preservation of Dutch merchants when sailing at sea, Dutch coffee soaked in ice water was born! In addition to being able to preserve for a long time, what surprised them even more was that the taste of coffee was not bitter at all, and even sweet, with a different flavor.
Dutch coffee spread to Japan along with Dutch traders, where it became popular and evolved into a three-pot ice drip pot. With the rise of the third wave of coffee from Japan, the technology of hand-brewed coffee and iced coffee spread from Japan to all parts of the world, and became popular in Europe and America. Interestingly, after 300 years, Dutch coffee has finally returned to the Netherlands with this wave.
The characteristics of ice-brewed coffee
1. Taste sweeter
The principle of making ice-brewed coffee is to use low temperature to extract for a long time. Low temperature extraction makes coffee sweeter and even has a mellow aroma.
2. Reduce bitterness
The bitterness of ice brewed coffee is relatively low because of the use of cold water soaking method, without hot water extraction, many chemical molecules will not be released, so greatly reduce the bitter taste of coffee.
3. Long preservation period
Keep the iced coffee in the refrigerator for up to several weeks. The reason is also that the molecular structure is not damaged by hot water, so it can prolong the shelf life. There will even be different levels of changes due to the lengthening of time.
4. Higher caffeine content
Because water has been in contact with coffee powder for a long time, the content of caffeine is higher than that of hot water extraction. Therefore, people who are sensitive to caffeine must pay more attention to excessive intake.
Homemade iced coffee
Ice drop and ice brewed coffee, which does not use hot water to brew coffee, has not yet caused a craze in China. However, this cold brewing method has become quite popular in Europe and the United States where coffee culture is popular. Its unique flavor and easy to make make it one of the most attractive brewing options recently.

So if you use 20 grams of coffee powder, match it with 200 milliliters of water, and so on. The proportion here does not need to be diluted. Pour the coffee powder and cold water into the container, stir well, and then refrigerate.
2. Keep it refrigerated for at least 12 to 24 hours
The length of time is the focus of ice-brewed coffee, there must be enough time to extract the essence of coffee powder at a low temperature. The length of time can be adjusted according to personal preference.
Third, filter coffee powder
After refrigerating for at least 12 hours, take the coffee out of the refrigerator and use a filter to filter the coffee powder. At this point, it is necessary to wait slowly for the coffee liquid to be filtered, and there is no need to speed up the filtering process.
