The formation of Kopi Luwak

LUWAK is an Indonesian Javanese language, which refers to an animal that emits fragrance and resembles a lynx. We call this animal a civet. The sense of smell of civets is unmatched by human beings. The civet is not only looking for ripe and sweet fruit, but also a natural coffee expert. They are used to foraging at night, and with a keen sense of smell, they will only look for coffee fruits that are good in color, pulpy and the most ripe, and they have no interest in coffee fruits that are not delicious. Therefore, after its screening, the coffee beans excreted by it are of high quality. When people harvest coffee fruit, they can only use our eyes and experience to choose a mature, high-quality coffee fruit. The expert's decision is extremely important. In fact, the inherent fruity flavor of coffee can not be detected by humans at all. The civet's sense of smell plays a decisive role. With the continuous development of the civet coffee industry, fruit growers who raise civets gradually emerged, and formed an industry.

The fruit of coffee is composed of exocarp, pulp and endocarp (parchment) silver film (silver skin). The civets' digestive system is very special. The intestinal enzymes and secretions in its digestive system are a perfect combination. After the coffee fruit enters the civets' digestive system, the exocarp and pulp are first decomposed and digested, leaving the coffee beans. Intestinal enzymes infiltrate into the coffee beans through the endocarp, which can break down the protein in the coffee beans into very small particles. This chemical process greatly increased the concentration of malic acid, citric acid, inositol and pyroglutamic acid in coffee. This may better explain why Kopi Luwak feels more comfortable "stink" and refreshing mint than other coffees. It happens to remove some of the bitterness of the coffee beans, and this will enhance the aroma of the coffee. This characteristic will also provide a theoretical basis for testing the authenticity of civet coffee in the future. The process of civet coffee beans passing through the intestines and stomach of civets is very similar to the wet processing process of coffee fermentation, which is more natural than artificial processing. The coffee treated by the civet digestive system is very thick and mellow and has a unique flavor that can not be matched by other coffee. The end result is that the coffee beans are almost as delicious as the natural mocha coffee. It's like chocolate in your mouth. These coffee beans are complex, unexpected, ultra-smooth, zero acidity, refreshing and lingering aftertaste.

Rediscovered Tibica Coffee Tree-Arabica Coffee Bean

As early as 180 years ago, people came to the conclusion that the Tibica coffee tree transplanted by the Dutch East India Trading Company in the Manning area of the Sumatra Plateau has disappeared! But some people are skeptical, including Mr Albert, the current owner of Manning. In mid-1995, they organized and launched a campaign to recover Tibica Coffee Tree. When they were about to give up in 2000, one day they and the local villagers came to an altitude of 1550 meters and found a small coffee forest that was almost submerged in the dense jungle. Some of them are still very old, fully 15 meters high! At this height, there is no one in the area to plant coffee trees, and it is boldly conceived that coffee seeds may be brought to this area by birds or other animals and then propagate freely. Later, through a series of investigations and evidence collection, it can be confirmed that this is the Tibika coffee tree introduced by the Dutch colonists in Mantenin at that time! This Arabica coffee was recognized as the best coffee in the world at that time, including now it is also recognized as high-quality coffee in the world.

Coffee was later introduced in the lower Gibbon Mountains. This is the coffee ingredient of Manor Kopi Luwak!
