With the passage of time, it is already June, and the weather has begun to get hot. Friends in the south said that they can no longer stay outside for 2 minutes. Every hot weather, people can't help but want to have a refreshing cup of iced coffee. One of the cups of coffee that I have to drink every year is cold coffee.
What is cold coffee?
Cold extract coffee, known as ColdBrewCoffee in English, is ground coffee beans soaked in cold water for more than 8 hours, and then the coffee grounds are filtered out through a filter. The way to make cold extract coffee is very simple, as long as the parameters are used correctly, you can easily make a good iced coffee. So, how to choose the parameters such as the degree of grinding and the ratio of powder to water for making cold-extracted coffee?
Grinding degree
Because cold-extracted coffee is soaked in ice water, the extraction efficiency is extremely low. In other words, there is no need to worry about over-extraction at all. When comparing the grinding degree of hand punching, you can choose a slightly smaller grinding degree, taking the pass rate of the No. 20 standard screen as 85% as the reference standard, and the fine powder as little as possible.
Qianjie tests found that more fine powder will not only make the filtration time longer, but even after filtration, there will be more oil and fine powder floating on the surface of the coffee liquid, affecting the taste.
Powder-water ratio
So how much water is most appropriate to soak? In the past, the production standard in the street was that the ratio of powder to water to ice was 1:8:4, that is, the actual ratio of powder to water was 1:12. Ice was added to ensure that the temperature of the water was low enough to ensure a stable extraction efficiency.
Temperature
In general, cold-extracted coffee needs to be extracted at low temperature in the refrigerator, and it takes 24 hours to extract at low temperature, so can cold-extracted coffee be extracted at room temperature? Cold-extracted coffee can of course be extracted at room temperature, but correspondingly, the extraction time is shortened, but Qianjie Coffee recommends reducing the extraction time to 8 to 12 hours when extracting at room temperature.
How to make cold extract coffee from Qianjie coffee
Cold extraction coffee is a very easy to master production method, the previous street coffee cold extraction production method is based on 50 grams of coffee powder, coffee powder grinding thickness using 20 standard sieve pass rate of 85%. Put the coffee powder into a glass bottle, then add 400ml of normal temperature water and 200g hard ice cubes (600g ice-water mixture) with a powder-to-water ratio of 1:12, then stir the coffee powder with water with a stirring stick and seal it in the freezer.
After 12-24 hours in the refrigerator, use filter paper to filter out the coffee grounds to get a clean coffee liquid, then use a clean sealed bottle to put the coffee liquid in a clean bottle and refrigerate it for about 4 hours before drinking.
