Brazil-- A New starting Point for Coffee Competition

The timing of these events could not be better for Brazilian specialty coffee producers, such as our regional partner Carmo Coffees. For several years, Carmo has been experimenting with a variety of exotic coffees and innovative fermentation techniques, and has just launched its own series of unique and amazing coffees that are worth competing for. Yes, Brazil is producing competitive coffee.

At this year's World Brewing Cup, CCS will cheer for two competitors: Veronika, representing her hometown of Slovakia, Brewing Finca Deborah, and Norwegian champion Tom Kuyken, who will brew oxygen-free Sultan Rume at Camo Coffee's experimental farm in Southern Santu Aurelio.

The farm began about five years ago with a collaboration between Luiz Paulo Pereira and Camilo Merizalde (the Colombian pioneer behind the Santuario project) and fermentation expert Ivan Solis from Costa Rica. South Santulio currently has 30 hectares of land for coffee production, and their goal is to soon expand to 70 hectares.

New varieties

Nanshan Dorio has 25 different varieties and is the largest coffee garden in Brazil. Last year they harvested the first season of Sudanese shea butter. This year is the first bumper harvest for SL28.

Innovative treatment

As the new trees began to bear fruit, the team began processing experiments, including anaerobic fermentation. Instead of importing expensive equipment from overseas, they look for it in their own backyard. Camo de Minas was a dairy farm-Louis Paul's grandmother was famous for her cows and her coffee-so they bought a fermentor for cheese making.

The enclosed steel cans are easy to clean, with double walls and temperature control, and the Ivan Solis adapts to the precise temperature range required for coffee processing. The container used in Nanshan Durio can handle 2000 liters of cherries at a time-about 10 bags of green coffee.
