A brief introduction to the Taste characteristics of Blue Mountain Coffee is Blue Mountain Coffee really good? what are the taste characteristics?
We all know that Blue Mountain Coffee is synonymous with high-quality coffee, and some businesses will raise the price of low-quality commercial coffee beans with inferior quality. Some even add words such as "Blue Mountain flavor" and "Blue Mountain matching" to the packaging to make consumers confuse and buy by mistake. So I'm sure many people are curious about what the blue mountain flavor is. Let's talk about the authentic blue mountain coffee in front of this article.
Growing Blue Mountain Coffee in Jamaica
Jamaica, an island country located in the Caribbean, has been growing coffee since the early 18th century and has a history of nearly 300 years. When Jamaica was still a British colony, the then Jamaican Governor Nicholas Lawes brought back a coffee tree from the Caribbean island of Martinique and began to plant it in St. Andrews.
The highest elevation of the Blue Mountain is as high as 2256 meters. Coffee is generally planted below 1700 meters, which belongs to the ecological reserve. It is precisely because of the local maintenance that Blue Mountain is still a famous tourist destination. Jamaica is located in the tropics, coffee trees are distributed in the Blue Mountains, where the air is fresh and unpolluted, the climate is humid, the temperature is about 27 degrees, and it is cloudy all the year round, which can shade the coffee trees. Coupled with the fertile volcanic soil, it has created ultra-high quality blue mountain coffee beans.
The Blue Mountains occupy only a small area in the eastern part of the island of Jamaica, where coffee cultivation in Jamaica is unable to achieve a breakthrough in mass production, so it focuses on producing high-end boutique batches. The variety of Jamaican Blue Mountain Coffee is an elegant ancient Arabica variety Tippika, which has weak disease resistance and low yield, so it needs more manual input.
Clifton Manor
The Jamaican Blue Mountain No. 1 coffee on the daily bean list on Front Street comes from Clifton Farm.
Clifton Manor, the oldest estate in Jamaica, has grown coffee since the mid-18th century and has grown into one of the largest estates in Jamaica in 1900. In 1978, the Sharp family took over the management of Clifton Manor, improving the coffee growing environment in the estate and introducing advanced equipment to establish BMCP, currently the largest coffee processing plant in Jamaica.
Clifton Manor has always believed in the concept of environmental protection. A large amount of money has been invested in the construction of solar power stations and sewage treatment plants in Clifton Manor, and the peel has been fermented into organic fertilizer.
Blue Mountain Coffee treatment
Traditionally, Clifton Farm has used water to treat coffee fruit. After harvest, the fruit must be screened by bleaching water, remove the peel and pulp, let it ferment for 8-12 hours, then put the fermented beans into the pool and move back and forth, using the friction of the beans and the power of running water to wash the coffee beans until smooth and clean. The washed raw coffee beans need to be dried until the water content is 12-14%. The dried raw coffee beans need to be strictly screened again, and finally packed and stored in the warehouse.
Washed Blue Mountain Coffee has rich aroma, clean taste, sour, sweet and bitter balance. Qianjie believes that washed Blue Mountain Coffee can best represent the high quality boutique coffee in Jamaica. With the trend of the boutique coffee market, Clifton Farm tried to launch the Blue Mountain batch of sun treatment for the first time in 2019.

The following front street introduces authentic Jamaican Blue Mountain No. 1 coffee from several aspects. When the current street receives raw coffee beans from Blue Mountain one, it will be certified by Clifton Manor, an export company designated by the Jamaican National Coffee Bureau, and the cask containing raw coffee beans will have the English print of Clifton Manor and the logo of green water frog.
Unlike other countries, Blue Mountain Coffee is the only coffee producing area that uses wooden buckets to hold raw beans, while other producing areas are packed in sacks. The Rainforest Water Frog logo means that Clifton Manor meets the Sustainable Agriculture system Standards and is certified by the Rainforest Alliance Rainforest Alliance.
According to the elevation of coffee cultivation, Jamaica divides the coffee grown in the Blue Mountains into Jamaican Blue Mountain Coffee, Jamaican Alpine Coffee and Jamaican Coffee. Only Arabica Tippica coffee from 910-1700 meters above sea level, including St. Andrews (St.Andrew), St. Mary (St.Mary), St. Thomas (St.Thomas) and Portland (Portland) can be called Jamaican Blue Mountain Coffee (Jamaica Blue Mountain). Those below 910m above sea level are called Jamaican Alpine Coffee, while those below 460m are the preferred coffee for Jamaica.
Among them, Jamaica Blue Mountain is divided into four grades, the quality from high to low is: NO.1, NO.2, NO.3 and PB,PB (peaberry) are round beans. The basic standard of Lanshan No. 1 coffee raw beans from Qianjie is beans with more than 17 mesh, defect rate less than 2%, moisture content about 13%, etc., which looks like full grains, uniform size and blue-green raw beans. The flavor is both sour, sweet, bitter, fragrant and mellow.
When we get a bag of roasted blue mountain coffee beans, how can we tell if it is a real Jamaican blue mountain coffee? First of all, the bean body of Blue Mountain Coffee is regular and full in appearance. Because the flavor of Blue Mountain Coffee is partial to the tonality of nuts, it often chooses medium and deep roasting, so its texture is relatively loose, and a very crisp and coherent sound can be felt during grinding. The ground blue mountain coffee powder has a strong and unrestrained aroma, the most important taste, blue mountain coffee has a nutty, black, creamy aroma, the flavor is very balanced and mellow. This is the world-famous Blue Mountain flavor.

How to brew Blue Mountain Coffee
To brew high-quality Lanshan No. 1 coffee, Qianjie suggests that freshly roasted coffee beans should be selected for brewing. As the coffee needs 4-7 days to raise beans after roasting, the coffee beans shipped in Qianjie Coffee are all roasted within 5 days. This can ensure that the coffee beans received after you place the order are the freshest, which is just in the best taste period.
Qianjie believes that the high-quality flavor of Blue Mountain coffee lies in the balance of sweet and sour, mellow thickness and full aroma. On baking, Qianjie chose medium-deep roasting, which can highlight the nutty and cocoa aromas of coffee beans. Better alcohol thickness can be obtained by using KONO filter cup. The parameters are as follows: water temperature 88 degrees Celsius, grinding degree of coarse sugar (standard screening rate of 20), 15g coffee beans, powder-water ratio 1:15, three-stage extraction.
Now the KONO filter cup is moist, which can make the filter paper and coffee filter cup fit better. Put 15g coffee powder into the water in the sharing pot at the same time, steam with 30g water for 30s, then start injecting water around the center with small water flow for 30s, until 125g begins to segment, wait until the coffee powder layer drops to half the position of the filter cup and start to inject the second stage with the same method, until 225g, and then the filter cup can be removed after all the dripping is completed.
After grinding, Lanshan No. 1 can smell very strong aromas of chocolate and cocoa, with the sweetness of caramel in the process of cooking, and the entrance is full-bodied of nuts and dark chocolate, with moderate sweet and sour taste, clean taste and long aftertaste.
