What is the difference between water-washed coffee, sun-treated coffee and honey-treated coffee?
Did you know that almost all the coffee you buy at the grocery store is processed in the same way? It is processed using standard modern coffee processing methods, called washed or wet coffee. The wet treatment removes all the coffee fruit from the surface of the coffee bean and then lets it dry.
On the other hand, a special coffee called natural coffee or dry coffee uses the oldest way to process coffee; instead of taking away all the fruit, the beans are allowed to dry in the whole fruit. This type of coffee can only be found online or in specific coffee shops.
The advantage of washed coffee is that it avoids the peculiar smell (such as fermentation, or worse, decay) in natural coffee caused by improper handling, while the advantage of natural coffee is that more fruity flavor of coffee is incorporated into coffee beans. The third method, called honey-processed coffee, tries to combine the advantages of the two methods. This coffee in between is called honey coffee because it becomes as sticky as honey during drying; there is no real honey.
