When farmers or processors process honey coffee, they remove the cherry skin and most of the flesh, leaving mucus. Then dry the coffee with a combination of light or light and a dryer. This leads to varying degrees of fermentation because high levels of moisture are captured by the sticky material in a short period of time and some additional acidity is dried into the coffee beans during the drying process. The drying time of honey treatment can range from 4 days to 8 weeks or more.
Therefore, honey-treated coffee does not remove all the fruit before drying like brewed coffee, nor dry the beans in the fruit like natural coffee, but leave something in the fruit to stick to the beans when the fruit dries.
