Qianjie-Jamaica Blue Mountain Coffee exported to Japan, sharing of brewing parameters

The most important feature of Blue Mountain Coffee, which comes from the Blue Mountains of Jamaica, is its balance. The balance of acid, sugar, alcohol and bitterness in its taste is nearly perfect, which can be said to be a very superior display of all aspects of coffee. As a result, the price of Blue Mountain coffee is very high, ranking among the ten most expensive coffees in the world. If you want to drink an authentic cup of Jamaican Blue Mountain coffee, you need to bear a high price of at least $49 per pound (about 332 yuan / 454 grams in RMB). Yes, the price of 332 yuan can't buy a jin.

The highest peak of Jamaica's Blue Mountains, at 2256 meters above sea level, is the highest peak in the Caribbean and a famous tourist attraction. It is located in the earthquake zone, with fertile volcanic soil, fresh air, no pollution, humid climate, foggy and rainy all the year round, with an average precipitation of 1980 mm and a temperature of about 27 degrees. It is precisely under such climatic conditions that Blue Mountain Coffee is such a sour, sweet, mellow and bitter coffee that is close to perfect.

In 1960, the blue mountain area of Jamaica was hit by a hurricane, and most of the estate facilities and coffee trees were destroyed. Fortunately, foreign capital, including Japan, provided great help to the struggling Blue Mountains of Jamaica at that time. As a result, Japan has acquired a majority stake in Blue Mountain Manor as well as preferential import rights. Japan accounts for 90% of Jamaica's blue mountain coffee imports, and other countries can only allocate it from the remaining 10%.

And Jamaica's coffee production has been low, harvesting about 40, 000 bags (60kg) a year, while Brazil, the world's largest coffee exporter, can harvest 30 million bags (60kg) a year. Because of the low output, the export share of coffee is almost monopolized by Japan, resulting in a shortage of Blue Mountain Coffee in other places except Japan. (in fact, Blue Mountain Coffee is mostly packed in 70kg buckets, but it is still measured in accordance with the international standard 60kg/ sacks. Blue Mountain Coffee is also one of the few coffees still packed in 70kg buckets.)

Flannel filter cloth can retain some of the oil esters of coffee because its pores are larger than filter paper, unlike filter paper, which usually filters out all oil esters, so the coffee made with flannel filter cloth is thicker and smoother than filter paper.

Parameters: water temperature 85 ℃, medium grinding (BG 6S: 64% pass rate of Chinese standard No. 20 sieve); powder quantity 16 g.

Technique: 35 grams of water is steamed for 30 seconds, water injection to 123 grams is divided into sections, when the water level is about to be exposed, the water injection stops when the powder bed is about to be exposed, flannel filter cloth is removed when the powder bed is about to be exposed, and the extraction time is 1 minute and 50 seconds.

Flavor: it smells smoky and cocoa, with chocolate, herb, cream and licorice in the mouth, and caramel is sweet. The thickness of the whole alcohol is high, but the fruit acid is also obvious.

Knowledge gift: in May 2010, Hangzhou Coffee and Western Food Industry Association, with the support of Hangzhou Municipal Government, signed a memorandum of cooperation on trade of raw beans in Blue Mountain Coffee with Jamaica Coffee Industry Bureau in Hangzhou. And signed the letter of intent of the sole distributor of Blue Mountain Coffee Raw beans in China on July 15, local time, during the cooperation period, at least 70 tons (70 kg standard wooden barrels in 1000 barrels) of Jamaican Blue Mountain Coffee Raw beans were provided to China every year.
