What is manning coffee?
Manning is neither the name of the producing area, nor the name of the port, nor the name of the coffee variety, but a misunderstanding story. During the Japanese occupation of Indonesia during World War II in 1942, the Japanese attacked Sumatra, the Netherlands surrendered a month later, and then the Japanese captured Indonesia. However, Indonesia was successively colonized by Britain and the Netherlands, so the Indonesian people did not react strongly to the arrival of the Japanese army.
One day a Japanese soldier drank delicious coffee in a local coffee shop in Sumatra, so he asked the boss the name of the fast coffee. The boss mistakenly thought that the Japanese soldiers asked him where he was from, so he replied "Manning people".
Then the Japanese soldier was obsessed with the cup of coffee after he returned to Japan, so he found the owner of the store in Sumatra and asked him to export a batch of beans of the same kind with a cup of coffee to Japan. Sure enough, it was very popular with Japanese consumers, and in order to make consumers remember this coffee bean better, the coffee bean was named Mantenin. In this way, Manning Coffee was born. So what we generally know as Mantenin coffee is actually "Sumatran coffee".
Characteristics of Mantenin coffee beans
The most representative treatment of Manning is the wet planing method. The common water washing, sun and honey treatments will retain the endocarp until the bean body is dehydrated and hardened, the moisture content is reduced to 12%, or it will not be worn off after 1-3 months of storage. However, the wet planing method takes off the endocarp when the bean body is wet and soft, and the moisture content is as high as 30-35%, so that the surface of the raw bean is directly exposed, and then continue to dry.
Because the drying time is shortened, the fermentation period of coffee beans is shortened, and the coffee beans used in Manning Coffee are Arabica varieties, but they carry a small amount of Robusta genes, so they are not sour. The rapid drying process will improve and reduce the sour taste.
Because the acidity is not high, it is not suitable to use shallow roasting to forcibly retain the green sour taste, so it is necessary to increase the alcohol thickness through deep roasting to bring the flavor of caramel, herbs and cocoa to Mantenin coffee. This also shows Mantenin's unique "regional flavor".

How to brew deep-baked manning coffee?
The longer the roasting time, the looser the structure of the coffee beans, and the faster the release of coffee substances, so Qianjie Coffee recommends that you should thicken the grinding degree of the Mantening coffee, and do not use too high temperature water to reduce the extraction of the back section of the coffee and reduce the bitterness.
Qianjie Coffee Store will use the following drip extraction parameters: filter cup: KONO, powder quantity: 15g, water powder ratio: 1:15, grindness: Chinese standard No. 20 sieve pass rate 70%, water temperature: 88 ℃.
