Fazenda Santa Ines is located in the autonomous city of Carmo de Minas in the south of Minas Gerais, at the foot of the Mantiqueira Mountains. Sertao Group is highly committed to environmental protection, preserving a large area of native forest in the project, protecting all mountain springs, streams and vegetation on both sides of the project.

The social responsibility of the farm was also taken seriously: 13 houses were built for workers and their families, including the necessary infrastructure, including water, electricity and drainage systems. These houses are home to 35 employees and their families, a total of 80 people. The rest of the workers' families live in Olimpio Noronha. In addition to wages, all families have access to milk, coffee, medicine and other assistance, as well as access to football fields, battlefield and venues for entertainment and sports. It is easy for the children who are studying to get to school: buses pass by the door several times a day to take them to school.

Because of the terrain, cherry picking in Fazenda Santa Ines has always been done by hand, and cherries are collected on a piece of cloth. This precaution is taken so that the coffee will not be contaminated or lose its quality. Once the cherries are picked, they are taken to Fazenda do Sertao, another partner in the Selto Group, where they are washed, pulped and spread out to obtain high-quality products. The characteristics of citrus are amazing, but it has a subtle texture and hierarchical, complex taste. Very aromatic, with a chocolate-like body, a creamy palate and a long, sweet finish.
