After more than two weeks of sun exposure, the dark brown coffee cherries are professionally stored while the full flavor ripens. Kochere is a small growing area located about 25 kilometers southeast of Yegashefi. The coffee beans harvested come from local coffee farmers. It is composed of a large number of individual coffee farmers. The average cultivation area of these small farmers is about 1 hectare. The cultivation altitude is about 1,900 to 2 kilometers. The coffee varieties are mainly a mixture of Typica and Heirloom (native species). Due to the relatively advanced raw bean water treatment equipment in this producing area, it has always had a high level of performance in the field of washing treatment, with honey and citrus complex tonality clean and sweet, praised by people. The main mode of local production is that small coffee farmers will harvest red fruits from each harvest and send them directly to the washing and treatment plants of neighboring cooperatives for unified treatment.

Method: Steam with 30g water for 30 seconds, inject water evenly into 125g sections with small water flow, continue to inject water to 225g when the water level drops and is about to expose the powder bed, remove the filter cup when the powder bed is about to be exposed, do not use 5g water at the end, start steaming and time extraction time is about two minutes.
