Panama has a long history of producing the world's most famous coffee. The most noteworthy is geshia. Coffee itself is beautiful, but the most important thing is the environment in which it grows. Take the Poquet Valley, for example, whose high altitude, rich volcanic soil and plenty of shade produce this naturally processed Cataui, in line with Panama's reputation.

Coffee trees did not originate in Panama, but appeared around the 19th century. Most recently, in 1990, Panamanian coffee producers founded SCAP (Panamanian Coffee Association). SCAP was established to become a hub for the Panamanian coffee community, sharing methods and new projects, including how to protect crops from changing environmental factors.

Finca Elida is a 1.5-hectare plantation run by the Lamastus family over three generations. As one of the tallest plantations in Panama, it is surrounded by a private forest reserve and the National Voranic Park, which is home to local plants and birds.

At Elida, Wilford Lamastus prides itself on focusing on drying and resting methods, continuous research and improving the processing technology of the final product. Picking and manual processing, and drying in the cherry pulp, which naturally takes 10 days to obtain 10% humidity, low temperature drying in the sun, cherries have a long ripening period.
