This washed gesha is fermented with sema yeast to create a sweet fruity cup with layered floral tones. Blackberry and hibiscus aromas with hints of pomegranate, ginger and lavender. The sour and silky texture of lemon curd gives it a eucalyptus finish.

In 2004, the Petersons in Hacienda La Esmeralda decided to separate plots based on their location on the farm and to keep them separate throughout the processing. By doing so, the Petersons were able to isolate the cup shape of the Gesha variety and experience the juicy acidity and multi-layered aromas it had to offer. This is a common practice today, and the decision to divide lots was gradual and experimental at the time.

This experimental spirit led the Petersons to begin experimenting with Scott Labs 'Lalcafe yeast during fermentation processing. A special yeast, Cima, is known for its ability to enhance brightness, citrus flavor and mouth feel. After coffee cherries are peeled, the seeds are placed into a fermentation container, inoculated with Cima yeast, fermented for 45 hours, then rinsed and moved to a patio to dry for 5 days.

This is an extraordinary Esmeralda geisha who grows in the volcanic soil of Poquet and scatters in the mists of the Pacific and Atlantic oceans.

Canas Verdes has a dry season of three to four months, but even then the air is cool. Half of Canas Verdes is part of a land originally purchased in 1967 by Peterson Holdings, which initially used the land as beef pasture and later to raise cows. Coffee was once grown in this area, and there are only a few homes in this hard-to-reach area. After 2004, the Petersons began buying small plots of land around the original Canasverdes farm."
