Coffee beans with flower and fruit aroma and juicy flavor have become more and more popular in recent years, including Panamanian Rosa Coffee. Panamanian coffee is famous not for its output, but for its unique flavor. Panamanian coffee is also becoming the first choice for many coffee lovers.

Panama itself is small, but there are even smaller places to grow coffee. Panama's coffee industry is concentrated in three regions of Chiriki province: Bucket, Walken and Renacimiento. The three producing areas are located on both sides of the Baru volcano, near the crater, and the area is also individually known as Valley of Flowers and Eternal Spring (Valley of Flowers and Eternal Spring). The area is rich in volcanic soil, moist air humidity, abundant rainfall, dense vegetation and clouds, nourishing coffee trees and producing high-quality coffee beans with rich flavor. Many different microclimates also help to produce coffee beans with multiple flavors.

Among them, Deborah Manor is in the Walken producing area. Deborah Manor (Finca Deborah) is a green and natural energy estate. The treatment plant is powered by a solar system, and in this high-altitude and remote area, the traditional power system cannot supply the electricity needed by the processing plant and generates electricity in its own way. For this reason, the manor was able to maintain the integrity and uniqueness of the environment in the area. In addition, as a shade planting manor, Deborah is integrated with the mountain scenery of the area, maintaining the original natural environment and maintaining the living area of local birds and wildlife.

Deborah Manor is located in the volcanic area of Chiriki province, which is 1900 meters above sea level in Panama. Deborah's rose summer is planted in the most primitive forest environment. Deborah Manor can be said to be one of the most remote and highest estates. At such a high altitude, its night temperature can reach about 10 degrees Celsius. Extreme elevations and lower temperatures slow down the growth rate of coffee trees and make them produce more nutrients, so they can grow harder and sturdier (high density) coffee beans.

Deborah Manor is sheltered by rainforest, forming a very beautiful and natural environment, rich in rare species of animals and plants. Do not use non-renewable energy-powered machines at all, and strictly control the use of chemical pesticides and herbicides. Make greater use of natural organic fertilizers to maintain the growth balance between coffee trees and trees. Because Deborah Manor is located at a high altitude, the spread of coffee disease is minimized. Temperature not only inhibits fungal growth and other harmful diseases. Coffee trees, on the other hand, are able to give their nutrients and energy to their fruits instead of protecting themselves from diseases and insect pests. The above advantages also help the operation of the manor, enabling it to reduce the fluctuating costs of operation and production, thereby providing high-quality and high-priced coffee beans.

Jamison Savage, the owner of Deborah Manor from New York, originally worked in the financial industry, but after marrying his wife of Panama, he decided to give up the fast-paced life in New York and join the Panamanian jungle. In 2007, Savage began planning for the estate; in 2010, the first rose summer coffee tree was planted at an altitude of more than 1900 meters; in 2015, a small harvest; and in 2016, a commercial harvest. During this period, many local Panamanian farmers questioned that coffee could not be grown at such a high altitude, but Savage was unmoved, and Rose Summer Coffee also took root and thrived in this severe environment, and finally fought back those unrealistic questions with actions and results.

It is worth mentioning that Jamison Savage has three projects, namely the aforementioned Deborah Manor, and the Morgan Manor and Savage series. Of the three projects, the Savage series has to be mentioned.

The Savage series is the product of Savage Coffee (Savage Coffee) initiated by Jamison Savage. The project was launched in the Bouquet region of Panama and consists of small coffee farms and small farmers in the Buquet and Walken producing areas. The coffee fruits of the Savage series are also picked from the above-mentioned members. In order to ensure the superior flavor of the coffee, the rosy summer coffee fruits of the Savage Coffee project are all fully ripe coffee red cherries.

First dry the fresh and ripe coffee cherries in the sun in the greenhouse, then put the dried coffee fruits into a sealed container and extract oxygen for dry fermentation for 36 hours. finally, the anaerobic fermented coffee fruits are peeled and 100% of the pulp is retained for re-fermentation. After a series of operations, this Savage Rose Summer Coffee is full-bodied, sweet and delicious, with aromas of fresh fruit and flowers.

As soon as the baker in front street received this high-quality raw bean, he immediately began to make a baking plan. In order to highlight the floral aroma, juice, acidity and sweetness of this coffee, medium and light roasting is used. This Savage series of coffee, with attractive white flower aroma and the sweet and sour taste of pineapple and lactic acid drinks, is so full that baristas on the front street never forget it and praise it.

When the baristas of Qianjie are cooking the beans, considering that the beans are lightly roasted, while the lightly roasted coffee beans have a low solubility, they will use higher water temperature to cook them in order to ensure that the rose summer flavor is fully extracted. At the same time, filter cups with faster flow rates will be used. In addition, in order to better experience the hierarchy and flavor of Rose Summer Coffee, Qianjie recommends a powder-water ratio of 1:16.

Filter cup: Hario V60

Water temperature: 93 degrees Celsius

Amount of powder: 15g

Ratio of powder to water: 1:16

Degree of grinding: pass rate of No. 20 filter is 80%.

Qianjie coffee is brewed by three-stage water injection, first inject 30 grams of water and steam for 30 seconds, small flow slowly circle water injection to 130 grams for segments, the water level in the filter cup is about to expose the powder bed and continue to inject water to 240 grams, wait for the water in the filter cup to drop completely to the sharing pot, the filter cup can be removed, and the total extraction time is about 2 minutes.
