Deborah Manor is located in the volcanic area of Chiriki province, which is 1900 meters above sea level in Panama. Deborah's rose summer is planted in the most primitive forest environment. Deborah Manor can be said to be one of the most remote and highest estates. At such a high altitude, its night temperature can reach about 10 degrees Celsius. Extreme elevations and lower temperatures slow down the growth rate of coffee trees and make them produce more nutrients, so they can grow harder and sturdier (high density) coffee beans.
Deborah Manor is sheltered by rainforest, forming a very beautiful and natural environment, rich in rare species of animals and plants. Do not use non-renewable energy-powered machines at all, and strictly control the use of chemical pesticides and herbicides. Make greater use of natural organic fertilizers to maintain the growth balance between coffee trees and trees. In 2007, Savage began planning for the estate; in 2010, the first rose summer coffee tree was planted at an altitude of more than 1900 meters; in 2015, a small harvest; and in 2016, a commercial harvest. During this period, many local Panamanian farmers questioned that coffee could not be grown at such a high altitude, but Savage was unmoved, and Rose Summer Coffee also took root and thrived in this severe environment, and finally fought back those unrealistic questions with actions and results.
It is worth mentioning that Jamison Savage has three projects, namely the aforementioned Deborah Manor, and the Morgan Manor and Savage series. Of the three projects, the Savage series has to be mentioned.
The Savage series is the product of Savage Coffee (Savage Coffee) initiated by Jamison Savage. The project was launched in the Bouquet region of Panama and consists of small coffee farms and small farmers in the Buquet and Walken producing areas. First dry the fresh and ripe coffee cherries in the sun in the greenhouse, then put the dried coffee fruits into a sealed container and extract oxygen for dry fermentation for 36 hours. finally, the anaerobic fermented coffee fruits are peeled and 100% of the pulp is retained for re-fermentation. After a series of operations, this Savage Rose Summer Coffee is full-bodied, sweet and delicious, with aromas of fresh fruit and flowers.
As soon as the baker in front street received this high-quality raw bean, he immediately began to make a baking plan. In order to highlight the floral aroma, juice, acidity and sweetness of this coffee, medium and light roasting is used.
