Exhaust is the process by which coffee beans emit gases after roasting. When you roast coffee, a lot of carbon dioxide and gases are produced inside the coffee beans.
A lot of gases are released in the first few days after roasting, and the problem is that these gases will release small bubbles when you brew, which will affect your coffee. These bubbles will destroy the contact between coffee powder and water, resulting in uneven extraction of flavor and aroma substances.
In other words, if you brew freshly roasted coffee, these gases will negatively affect the flavor of your coffee. For this reason, it is better to wait a few days after roasting before making coffee. This period of time during which carbon dioxide and chemical changes are emitted is called exhaust.
Exhaust will disperse the carbon dioxide produced during the roasting process of coffee, but we do not want these gases to disappear completely, but the gas content of coffee when we want to drink is just right, and the proper content of carbon dioxide will make coffee drink less flat.
However, how long it takes after roasting depends on many factors. Usually, three days to two weeks or three weeks after roasting are suitable for brewing. However, the difference between each coffee will also make the exhaust time required different. The brewing method, treatment method and roasting degree will affect the length of exhaust time.
There is no specific timetable for growing beans, only experience or advice from the baker.
14 days is recommended for very lightly roasted beans (oxidation is extremely slow because the fibers of the coffee beans are not completely destroyed during roasting (like meat))
10 days for light baking;(same principle as above, as baking deepens, the time for raising beans will decrease)
Medium baking in 7 days;(principle same as above, with the deepening of baking, the time for raising beans will decrease)
4 to 5 days for medium and deep roasting;(same principle as above, as roasting deepens, the time for raising beans will decrease)
Ordinary single bean is recommended to keep beans as above.
