The coffee varieties in Yunnan are mainly cultivated by two classic high-quality coffee varieties, Typica and Bourbon.

In 1991, the Katim Catimor series of varieties (stronger anti-virus ability and higher yield) were introduced from Kenya, which is a variety of Arabica species (also known as small grain species). Because the morphology and habits of the two varieties are similar, the two varieties are mostly mixed.

Small seed coffee plant name Arabica species, is a kind of coffee, a total of more than 100 varieties. Among them, tin pickup and bourbon are recognized as the best Arabica species in the world, and what the Baoshan people usually call "old varieties" are actually iron pickups and bourbon.

What is planted here is the Katim variety. Katim is an artificially bred Arabica variety with a pedigree of 1ram and 4 Robusta, and the first goal of breeding is "resistance to leaf rust". Katim is planted in a large area in Yunnan, but there are not too many iron wall cards, bourbon and other ancient varieties, the reason is very simple, those species are not alive, a large number of diseases and insect pests, the yield is still low. However, because in an introductory book that many people in China will read when learning boutique coffee, it is said that Katim has a devil's tail rhyme, that is, a bad after taste, which leads everyone to think that Katim is not good to drink.

Yunnan coffee treatment method
