Each tree is picked by hand after it matures between August and January. Coffee cherries are crushed and processed within 24 hours after they are picked again. Each coffee cherry consists of two beans, one of which is called "Peaberry". Coffee beans are then classified into different grades according to their size and shape, including the following grades: Extra Fancy, Fancy, Number 1., Select and Prime.
