Hawaii is the only state in the United States that grows coffee. Kona coffee is produced in the west and south of the Kona region on the island of Hawaii. Coffee trees are found in Hualalai and Mauna Loa.

In the Kona area, there are about 600 independent coffee farms. Most of them are small family farms, and coffee plantations are usually between 18 and 42 acres. For coffee to be certified as 100% pure Kona coffee, it must grow within about 2 to 30 miles of Hawaii's Big Island strip, known as the Kona Coffee Belt. Kona coffee trees thrive on the cool slopes of Hoarale and Mauna Loa. There is rich volcanic soil and afternoon clouds. The Kona weather pattern created by sunny mornings, wet, rainy afternoons and mild nights creates good conditions for coffee growth.

Coffee trees usually blossom in February and March, and green fruits turn red at the end of April and August and begin to ripen. Each tree is picked by hand after it matures between August and January. Coffee cherries are crushed and processed within 24 hours after they are picked again. Each coffee cherry consists of two beans, one of which is called "Peaberry". Coffee beans are then classified into different grades according to their size and shape, including the following grades: Extra Fancy, Fancy, Number 1., Select and Prime.
