Front Street-Sumatran Coffee introduction

Sumatran coffee is fascinating for its charming Chinese fir herbal flavor and unique spice flavor, and this coffee is unique on the coffee map. Do you know where they really grow? Sumatra Island is located on the equatorial line, and most of the island is covered by tropical rain forest. The annual humidity is 70% Mur90%, and the annual rainfall is 2000 mm. Even though the volcanic ash soil can make coffee trees grow vigorously, but this humid climate, it is easy to make coffee fruit moldy and rotten.

Due to the high humidity throughout the year, according to the normal washing method, the drying time will be twice as long as the normal treatment method, and if the coffee beans are not dried in time in a short period of time, it is easy to overfermentation or mildew, and each change affects the flavor of the coffee, so how to deal with the coffee fruit and preserve the coffee beans has become the biggest problem for coffee production in Sumatra.

The first step is to remove the outer pulp of the coffee fruit, retain the endocarp and pectin mucus, and put it into a concrete box or plastic bucket for fermentation overnight, which helps to decompose the pectin mucus and is easier to remove.

The second step is to wash our coffee fruit, and the pectin mucus will be removed during this clean. at the same time, this cleaning allows us to get coffee beans with only endocarp. If we leave them in the sun for 2-3 days, their water content will be reduced to 20-24%. So that the hardness of coffee beans can reach the hardness of detached endocarp.

The third step is that when the water content is 20-24%, the coffee bean itself is soft and even contains more water, while the endocarp is semi-dry, but the humid climate of Sumatra no longer allows drying. At this time, we need to use a machine to separate the endocarp from coffee beans. In this case, the peeled semi-dry endocarp often can not be removed completely, and there will always be residues. If you peel off more, the coffee beans will be damaged, forming the unique bauhinia beans of Sumatra, so the raw Mantenin coffee beans you buy tend to be unstable to a certain extent.

The fourth step is to peel off the uneven endocarp coffee beans to continue to dry, and the water content continues to drop to 12-13%. The coffee beans enjoy the sun during the day and are stored in sacks at night and continue to ferment under the action of water. When the drying is finished, the coffee beans can be taken away by the buyer.

Of course, there is another key that can not be ignored, and that is to pick beans by hand. Good Manning coffee often goes through three times of picking beans by hand. In such a way of dealing with air humidity, Sumatran coffee beans are uneven, and at this time it is the hard-working Sumatrans who let us drink high-quality Manning coffee. Think about how you usually pick beans when baking beans, and they have to face a whole season of output, just to bring you a cup of high-quality Manning coffee.

In the 16th century, the European powers began to engage in trade and war in the principalities along the coast of Sumatra until the Anglo-Dutch Treaty, which led to the revocation of British sovereignty in Sumatra. The Dutch carried out economic development and administration on the island.

In the 19th century, the kingdoms of Sumatra were defeated by Dutch colonists and spread Christianity among them. In addition, there are islanders who believe in Hinduism, Buddhism, Catholicism and so on. So Sumatran coffee is a symbol of courage!
