The third step is that when the water content is 20-24%, the coffee bean itself is soft and even contains more water, while the endocarp is semi-dry, but the humid climate of Sumatra no longer allows drying. At this time, we need to use a machine to separate the endocarp from coffee beans. In this case, the peeled semi-dry endocarp often can not be removed completely, and there will always be residues. If you peel off more, the coffee beans will be damaged, forming the unique bauhinia beans of Sumatra, so the raw Mantenin coffee beans you buy tend to be unstable to a certain extent.
The fourth step is to peel off the uneven endocarp coffee beans to continue to dry, and the water content continues to drop to 12-13%. The coffee beans enjoy the sun during the day and are stored in sacks at night and continue to ferment under the action of water. When the drying is finished, the coffee beans can be taken away by the buyer.
