The Republic of Nicaragua is located in the middle of Central America, bordering Honduras in the north and Costa Rica in the east and the Pacific Ocean in the west; Lake Nicaragua is the largest lake in Central America; the plains of Nicaragua are hot and rainy, belonging to tropical marine climate; the western coastal lowlands have obviously less precipitation than the east, and there are dry and wet seasons, belonging to tropical grassland climate; the annual average temperature in the central highlands is 18℃, the annual precipitation is 1500-2500 mm, and the rainy season is from May to December.
Nicaragua Falls is much more famous than coffee, which was cultivated in the late 19th century and did not become an important export until the mid-19th century. The government of Nicaragua encouraged European immigrants from Italy and Germany to buy coffee land and then allocate it to smaller plots (usually less than 5 hectares). Most coffee plantations are controlled by whites, who often use local people as cheap labor to manage coffee fields for them.
In the fine coffee market, Nicaragua is also relatively rare, with little production and less reputation than neighboring Costa Rica. Harvest time in Nicaragua is from October to December. The treatments used vary from farm to farm, some using African sunbeds, others using natural sun treatments or traditional washing followed by yard drying. The ash and shade method produces high quality Nicaragua coffee with a soft, slightly acidic flavor and good body.
