[Honey Treatment Method]

The honey treatment method is different from the traditional washing and sun treatment method. The picked coffee fruit is transferred to the treatment plant to remove the outer skin and pulp, and retain its pectin. The coffee is dried on the terrace or African trellis. During the drying stage, pectin fermentation not only brings out the acid value of coffee but also enhances the sweetness of coffee, and the flavor is closer to that of sunlight treatment because some pectin is retained in the process of drying. According to the pectin residue, insolation time in order from more to less can be roughly divided into black honey, red honey, yellow honey, white honey.

Aceh is located at the top of the northwest Indonesian archipelago. Because it is located on both sides of the equator, it belongs to a typical tropical equatorial oceanic climate. It is hot all year round, with an average annual temperature of around 27 degrees Celsius. From October to March of the next year, it is affected by the Asian and Pacific air currents, which is Indonesia's rainy season. From April to October, affected by the continental airflow of Australia, there is less moisture brought by the airflow. At this time, the climate is hot and dry, which is the local dry season.

Due to the dry and rainy season distinct climatic factors, coffee harvest period falls in the rainy season, that is, every year from October to March, harvest treatment and then take advantage of the dry season insolation drying.

[Crown Series]

Bener Meriah Regency is known locally as the heart and soul of Sumatra coffee, while Crown Mantenin is produced by local cooperatives working with farmers. In coffee bean varieties, Bourbon and Super Adan were used, and Super Adan scored the highest score of 88.84 in the COE Pilot Program competition organized by the Coffee Excellence Alliance (ACE).

In order to overcome this difficulty, the cooperative and farmers finally found a suitable way to expose the coffee beans after many trials. They built a high bed frame and covered it with transparent tissue paper to speed up drying and ensure the quality of the coffee beans during processing.
