Ethiopia is the first country to discover coffee. It is still the most important producing country and the best in terms of coffee quality and yield. Most coffee is traditional Arabica, with an annual output of about 350,000 tons and more than 70% exported to countries all over the world. About 15 million people in the country are engaged in coffee-related industries. More than 90% of farms or cooperatives belong to small-area cultivation. After 2008, Ethiopia will produce crops including wheat, corn, sesame, Coffee etc. fully introduced into ECX trading system (Ethiopian Commodity Exchange) to replace the existing auction and export methods, the practice is coffee farmers or cooperatives, coffee to ECX centralized warehouse, the same grade, the same area of beans will be mixed together and then directly auctioned, you do not know which farmers or which cooperatives, production, such practices actually have no impact on yield and quality, It is easier to distinguish the quality of coffee by price [one penny is worth the goods]. The affected is that the intermediate traders cannot freely track and obtain satisfactory profits [low price and high quality] to make it clearer to consumers, because they will be taxed heavily if they do not go through the ECX trading system. Today, more than 90% of them pass through this trading system, but the ECX trading system is not a good thing for buyers who love fine coffee. For this reason, Ethiopia has launched DST(Direct Specialty Trade) system since 2010. DST system is an Ethiopian auction held irregularly. Only fine coffee specialty coffee with SCAA cup test standard of more than 80 points can be traded with foreign green bean merchants under the name of its own farm or cooperative.

In Ethiopia, washed beans will be distinguished by adding 1 and 2 after the name (1 is better). Coffee cherries will be removed immediately after harvest, and then coffee beans will be fermented in water to remove pectin layer. This process takes several hours, and the number of hours depends on the type of coffee, production area and temperature. This process must be closely controlled. If there is a slight mistake, coffee beans will have inferior flavor. After fermentation is completed, Coffee beans are washed through a long, high-and-low sink, and any defective beans and foreign matter are removed during the process. After that, coffee beans are dried on a drying bed. At this time, close attention should be paid to turning every few hours to ensure that the drying process is complete. This is the whole process of washing beans.

Addis Ketema, the capital of Ethiopia, is the distribution window for coffee. This is the four production bases of the Yegashev Coffee Cooperative. It is one of the largest coffee growers 'organizations in the world. It has about 43,000 members and 22 basic small cooperatives. It is dedicated to the cultivation of high quality coffee on an area of 62,000 hectares to ensure the production and quality of high quality coffee. The cooperative is granted special authority to bypass the Ethiopian government. Sell its coffee independently, maintaining transparency and openness to foreign buyers.
