Ethiopia is the first country to discover coffee. It is still the most important producing country and the best in terms of coffee quality and yield. About 15 million people in the country are engaged in coffee-related industries. More than 90% of farms or cooperatives belong to small-area cultivation. Today, more than 90% of them pass through this trading system, but the ECX trading system is not a good thing for buyers who love fine coffee. For this reason, Ethiopia has launched DST(Direct Specialty Trade) system since 2010. DST system is an Ethiopian auction held irregularly. Only fine coffee specialty coffee with SCAA cup test standard of more than 80 points can be traded with foreign green bean merchants under the name of its own farm or cooperative.
In Ethiopia, washed beans will be distinguished by adding 1 and 2 after the name (1 is better). Coffee cherries will be removed immediately after harvest, and then coffee beans will be fermented in water to remove pectin layer. This process takes several hours, and the number of hours depends on the type of coffee, production area and temperature. This process must be closely controlled. If there is a slight mistake, coffee beans will have inferior flavor. After fermentation is completed, Coffee beans are washed through a long, high-and-low sink, and any defective beans and foreign matter are removed during the process. After that, coffee beans are dried on a drying bed. At this time, close attention should be paid to turning every few hours to ensure that the drying process is complete. This is the whole process of washing beans.

It is one of the largest coffee growers 'organizations in the world. It has about 43,000 members and 22 basic small cooperatives.
