How are the raw beans of selected coffee harvested? What are the methods of selecting coffee beans?
◎ harvesting
Harvesting method is one of the criteria for judging selected coffee. If calculated in terms of germination time, it will take about five years for Arabica coffee to blossom and bear fruit. The fruiting period is different in the southern hemisphere.
There are many large coffee farms in Brazil, called "Fazendas", which are often harvested by machines, but they are not the worst in grade. the worst coffee may come from unorganized small farmers, simply because they have no concept of quality control and no standards in handling, but produce bad coffee.
As a result, selected coffee always comes from small and medium-sized farms run by enterprises, and some even create their own brands for marketing all over the world. For example: Raminita La Minita in Costa Rica, Duran in Duran Farm in Panama, etc.
What is also known is that the earliest "Jamaican Blue Mountain Coffee" refers to coffee produced by Warren Ford Farm Wallenford Estate and Silver Hill Farm Silver Hill Estate.
Generally speaking, coffee is harvested in several ways:
1. Machine harvesting method
Automatic machines are used to harvest coffee fruit, but sundries such as branches and leaves will be harvested, and mature and immature fruits will be harvested, so they will not have good quality.
2. Branch rubbing method
The harvester will wear a basket on his waist, straighten the branch and rub it from the bottom to the top with his fingers, so that all the fruit on the whole branch will fall into the basket, and the relatively mature and immature fruit will be harvested at the same time. on the contrary, it has a negative impact on quality.
3. Tree shaking method
The harvester shakes the trunk so hard that the fruit falls to the ground, then picks it up and puts it in a basket, which does not necessarily correctly receive ripe fruit, but usually harvests overripe and dry fruit as well.
4. Manual harvest method
Since all the fruits do not ripen at once, there are usually red and cyan fruits on the branches at the same time. When harvested manually, only red ripe fruits are picked and one grain is put into the basket. In this way, ripe and immature fruits are not picked together.
Selected coffee is the use of manual harvesting method, divided into 3 to 6 times to pick red and full fruit.
Selection method of ◎ coffee beans
Coffee beans are natural products, and no matter how carefully taken care of and handled, there is no way to ensure that every bean is perfect.
Therefore, one of the hurdles in the process of processing is selection.
There are several methods of selection, some of which are very simple, using only blowing or shaking methods to let crumbs and low-density beans float on top, while only choosing lower-layer high-density beans, some of the selection methods are much more complicated.
Two more elaborate selection methods can be briefly introduced:
1. Artificial method
The artificial equipment is an automatic conveyor belt about 2 feet wide. The machine lays the raw beans on top of the conveyor belt and rolls forward. The reason is that a number of women will sit on both sides of the conveyor belt and pick out the defective beans one by one.
The same batch of beans will be delivered several times, and the more refined the farm, the more times it will be selected.
2. Electronic method
The use of advanced computer systems can be divided into three parts, namely, light system, computer control system and jet system. First of all, the raw beans will be placed in a large funnel, and one grain will fall. At this time, the computer will drive the light system to emit light. After recycling, the computer will analyze the color, light transmission and other information of the raw beans, and then decide whether they are qualified or not. After that, the jet system will be turned on to blow away the failed beans.
