Coffee brewing ratio is the ratio of coffee and water, common brewing ratio from 1:13-1:15, 1:13 means that 15 grams of coffee needs to be brewed with 195 grams of water. If you want to use the French press at home, you can adjust the brewing ratio according to your own taste. Front Street Coffee uses a 1:13 grind this time.
Brewing water temperature
For different degrees of roasting coffee beans, the temperature of the water taken will also be adjusted. The recommended temperature for hand brewed coffee is between 86-93℃. However, the values selected in different regions will be different, such as Japan will choose a lower water temperature, because they like immersion extraction, such extraction method should not use a higher water temperature. In the front street, it is recommended that the water temperature of the beans cooked deeply should be lower. It is recommended to be between 86-88℃. Because the beans baked deeply are loose, the water absorption efficiency is high, and it is easy to extract. If the water temperature is too high, it is easy to have bitter and scorched taste. Brewing shallow baked beans is recommended for 90-93℃, with higher water temperature can extract the aroma and acid of shallow baked beans (flower and fruit acid), because the beans of shallow baked beans are harder, increase the water temperature can increase the extraction efficiency of coffee powder, avoid the appearance of acid and other unpleasant flavor. Medium baking can choose 88-90℃. The Colombia cherry blossoms used in this front street are medium-light baked and brewed using 91-92 degrees water temperature.
1. Preheat the pot with warm water; pour the ground coffee powder into the pot, and then inject 195ml of hot water (91℃), the amplitude of water injection can be larger (about 3 seconds to complete injection), let the coffee powder tumble, improve the extraction efficiency.
2. After filling, pull up the strainer, cover the pot and wait 4 minutes.
3. After four minutes, gently press the filter rod down to 1/4 of the pot body to prevent the fine powder at the bottom from flowing to the top.
4. Pour the coffee into the prepared cup and enjoy!
