Because the beans baked deeply are loose, the water absorption efficiency is high, and it is easy to extract. If the water temperature is too high, it is easy to have bitter and scorched taste. Brewing shallow baked beans is recommended for 90-93℃, with higher water temperature can extract the aroma and acid of shallow baked beans (flower and fruit acid), because the beans of shallow baked beans are harder, increase the water temperature can increase the extraction efficiency of coffee powder, avoid the appearance of acid and other unpleasant flavor. Medium baking can choose 88-90℃. This time the front street uses Ethiopian Kocher, brewed using 91-92 degrees water temperature.

Front Street Use Philharmonic Pressure Steps:

2. Put the pressure upside down, pour 20 grams of ground coffee powder into the pot, then pour 180 grams of hot water at 92℃, and start the timer.

3. After pouring, gently stir with a stirring stick for 50 seconds. Close the filter cap and squeeze upwards to remove excess air.

4. Turn over the press, filter paper and filter cover down, coffee powder up, squeeze down the press to extract, about 30 seconds to complete the extraction. At this point we get a high strength coffee solution of about 150ml. The total extraction time was 1 minute 30 seconds.

5. Pour the coffee solution into 120ml of hot water for dilution. The diluted coffee solution can better distinguish the flavor.
6. Stir and shake until smooth and serve.
