Carnett Manor is located in the highest altitude of Tarazu, a Costa Rican boutique coffee producing region, which is also the most densely planted area of Costa Rican fruit. In addition to planting coffee trees, the manor mainly grows passion fruit. The coffee trees planted in the manor can be said to be the fewest in the Tarazhu. the owner will only grow coffee in a specific area, so every coffee tree has been taken good care of.
Although the coffee planting scale of the manor is small, it has produced a series of well-known musicians in the boutique coffee industry. The owner of the garden brought the corresponding classical music style through the experience brought by each coffee bean, and named four kinds of coffee beans after the creator of the music, namely "Beethoven", "Mozart", "Bach" and "Chopin". Beethoven's early creation is mainly romantic style, drinking this coffee bean in the front street will also be associated with Beethoven's romantic music. The Beethoven coffee beans purchased from Qianjie Coffee are treated with traditional washing. The washing method is to put the screened coffee fruit into the peeling machine and initially remove its peel and pulp. Put the coffee beans with residual pectin into the water and let them ferment for about 18-36 hours.
After fermentation, the raw coffee beans with parchment are washed in a flow tank to remove the pulp and pectin. After washing, the coffee beans are dried so that the moisture content is reduced to about 12%. Finally, the parchment of raw coffee beans is removed. Qianjie believes that after washing beans, the taste is relatively clean and bright, and the performance of acid quality will be very lively.
Suggestion on coffee baking in Qianjie
The front street baker felt that Beethoven's bean was dense and decided to bake it in a medium-to-light degree, which could not only retain the bright acidity, but also show the fruit flavor of the bean, and improve its richness and balance. The furnace temperature is preheated to 170℃ into the pot, the firepower is adjusted to 120,the throttle is open to 3, and the temperature recovery point is 36 ". Keep the firepower.
At 140℃, the firepower remains the same, and the throttle opens to 4. The smell of grass turns yellow and the smell of grass disappears and enters the dehydration stage.
